The crispy fried noodle is called 两面黄,it originates from Suzhou. That fried noodle needs to be soaked in the soup long enough for it to soften back up to be tasty
Ya guys a lot of these foods are variations based on Cantonese/Hong Kong cuisine, and not only that but they have been considerably modified for American tastes by very early Chinese immigrants (mostly from Canton/HK), so that would explain why you've never seen them in northern China!

As a French Canadian, I remember seeing some of those things in the states and some other provinces here. But common Chinese food here is Peking Duck with Eggplant in black bean sauce or Zhajiangmian (not to confuse with the sweeter Korean version) and tiger skin chicken feet or pig ear salad and Dan Dan noodle or pork intestine noodle soup, my go-to as dumpling are zongzi with some Tianjin mature vinegar and garlic to dip, and you got to have some pork belly with that such as Hong Shao Rou or some char Siu or Cha Siu Bao. And our typical dumpling here is pork and green onion or pork and shrimp in a "Hunan" sauce (peanut butter and chilis) and finish with Sichuan cold jelly or Fresh flower Cake (reminds me of rose water Baklava) or Donkey Roll (look very similar to our traditional Quebec dessert: pet de soeur) and you have to finish with a tea, my favorite is Yingde Hongcha tea with Canadian ginseng. Not seen those fried wrapper filled but I have noticed recently that many newly Chinese immigrants from the USA have opened up sushi restaurants here and many have cream cheese in their sushi.
when I was in montreal for a summer camp, I was appalled to find out that there were literally no chinese restaurants (at least near McGill campus). The Indian guys all found a ton of restaurants to go to but I literally didn't find anything. Perhaps there were restaurants that I missed, or perhaps they looked more like Panda Express than something I'd find back home in Beijing, and I failed to realize that they were supposed to be "Chinese restaurants". Then you go to Toronto and you find stuff that is quite a good approximation of what you get in China.

Once I told a master degree student from Taiwan, think of these dishes as American food, not Chinese, his whole attitude changed about American Chinese food/buffet. In fact, after he went home, he often misses this cuisine.

First time I tried Lan Zhou La Mian, I was expecting and thinking of Taiwanese style beef noodle soup, so Lan Zhou was a let down. But my subsequent bowls were just lovely. They are two different things, created at different time and place.

Panda express is to Chinese food what Taco Bell is to Mexican Food. Can't lie though, I do enjoy Panda Express on occasion. Black Pepper Chicken, Chicken with string beans, and Beijing Beef are not bad. Not authentic but pretty tasty.

传统中国菜里就没有芝士这个东西,汉族是农耕民族,养鸡鸭猪比较多,很少养牛羊,所以奶制品很少,当然做菜就不会用到奶制品作为原料了。一般吃奶制品比较多的都是游牧民族,在中国,也就是蒙古族藏族和新疆的穆斯林那些草原上的民族吃奶制品比较多,他们用奶酪做菜是挺正常的。

發現有很多人都沒見過把麵條炸至脆脆的炒麵. 我想說, 香港人是有這樣處理麵條的. 有一種香港人常常會吃的料理叫『肉絲炒麵』, 就是把麵條炸得鬆脆, 然後把有肉絲和其他材料的芡汁倒在麵上. 不肯定是否香港獨有. 但這是很不錯的料理. 有機會到香港請務必一試!

西蘭花牛肉在廣東港澳比較常見。
「正宗」炒麵是廣東的濕炒麵,「熊貓」炒麵像炒油麵。

我觉得,要改成更健康,没有添加各种化学调料的美式中餐才能让美国人接受,本身中餐的口味老美是能接受的,主要是味精鸡精与各种调料老美接受不了,所以需要有健康的调料替代品
