    When I lived in San Jose ca
    There is a Restaurant in VIETNAM town that has an interesting way of advertising.
    When cooking these pork chops and chicken.
    They release a smoke cloud throught the town permeating the air w/the most enticing thing I've ever smelt in my ENTIRE LIFE!

    Great tip on scraping the marinade ingredients off then add them back on later to prevent burning. The pork looks delicious!

    So just clarify. Her ingredients are good, but for authentic season your meat with twice the marinade and also if you can procure thinner chops it’s better. Hammer the meat a bit for more tender consistency. Remember the pounding does two things make it thin for more rapid cooking and marinade, but also to break up the meat bundles.
    Finally, the kind of sugar and fish sauce. Use palm sugar or rock sugar for maximum flavor. Poor white, bleach sugar does not give you flavor. There are an abundant fish sauces in vietnam. You want to chose the most brinest for marinade and the lowest salt for dipping.

    hello. I'm Vietnamese. Followed her youtube for a long time. This is Vietnamese rib rice. ribs must be smashed. marinated with garlic seasoning. red onion and minced commune. seasoned with soy sauce. Street. condensed milk and honey. marinated overnight. then baked.

    Yum! Thanks for providing the link to the printed recipe so I can follow along with your UA-cam. I also can enjoy the wonderful smells from your skillet with this new smellavision app that I recently installed. You might also want to emphasize the need to find pork chops that are labeled as bone-in center cut pork chops to avoid disappointment, no matter the sear or the sauce. It will be worth the extra $$$s. Thanks for sharing this recipe, Marion! And, as usual, kudos to your great staff for the wonderful camera work that I enjoy so much.

    I love it!!! That looks really good!! You may want to check out the SearPro torch! I highly recommend it!!! It'll give you a perfect crust for your meat!! AND it is way CHEAPER compared to others, has a powerful flame, it is portable and the BEST of all is, it can SEAR ALL FOOD EQUALLY, just perfect! It is a multi-used torch so you can use it either for the kitchen or outdoors! Check it on UA-cam and their website! It is definitely worth the buy!!!

    Is the type of "long red chili" pepper you're using for the sauce a Long Cayenne pepper? I never see any chili peppers like the one in this video when I visit my local Asian grocery stores.

      Yes, they are the typical chillies sold in Australian supermarkets, those and birds eye chillies are easy to get but sadly few other types, fresh or dry.

    Could that brine be done and the meat frozen for a week or more? We buy meats in bulk and freeze around here

      I would say yes, no problem. Just let it defrost naturally and not in a microwave!

      @@annother3350 Hey Sara, I agree with Ann, sort of! This is a great question. Pork chops hold up very good for me if frozen properly to avoid freezer burn- meaning, double bagging. But, I am ignorant about whether or not a brining or a marinade, or both, of the pork chops, and then freezing those porkchops, would be a good thing, or not! I hope others will share their experiences in this regard.

    Marion, I have a question: If you marinate the raw pork chops in the lemon grass/garlic mixture, and then save it to spread on the cooked chops, isn’t that cross-contamination, or does that just pertain to chicken?

      It'll cook the cross contamination off. The mixture is not dense enough and would be heated to annihilate

      As long as the mixture gets over 70°c or so it's fine, so as long as it's cooked on the chop for the last minute

YOU CAN DIE FROM EITHER OF THEM!!!! You want to know how I know, in addition to the science of it?????? Because it almost happened to me: 8 days in the hospital sharing a room with a woman who had the same thing I did. SHE DIED!!!!! I had a temperature of 105 and was taken to the hospital in an ambulance. They expected me to die but I was extremely fortunate. I lost 13 pounds in 4 days there and kept losing weight. It took 7 months before I had a normal appetite.
      Please do us all a favor and do not speak of that which you know nothing about.

    THE TITLE IS A LIE. The title said 'grilled' pork chops but the video was 'fried' pork chops. It's hard to imagine that you don't know the difference?

      In what world is that fried? She’s using a grill plate, it just doesn’t have grill marks, doesn’t mean it’s fried. If anything, it’s seared.
