For stag edge you can use the 3cm thick slab for the counter surface but not the bottom laminated portion of the edge, it would be too heavy. We use 3/4 to 3/4 slabs for our stag edge counters where I work. The Dupont over Ogee is our most request edge profile and our most expensive labor edge is the Vasilis edge. It's like small Cove over Ogee for the top portion and an elongated Dupont over Ogee for the bottom portion. I think it's like $350 per linear feet.
Is the roundover edge more like a beveled edge or more like a half bullnose? Seems like fabricators have different names for the same edge profiles. I love the edge on the countertop in this video. Thx!

The white one is called a HALF BULLNOSE, not a round over.
When I went to my design center appointment for my new build, I chose that edge for my quartz. The lady who helped us called it a roundover, as well.
