He means being able to play by feel so that his hands can translate what his brain wants. He's pretty good at it in the video, but when he says he wish he knew the notes, he's referring to a very high level of connection to the instrument, like he has with guitar. When he plays guitar it's like there's nothing between his mind and the sounds that come out the instrument.
Musicians are, and have always been, people. He can do whatever he wants without worrying about being **enigmatic** and most of us who are here for the MUSIC and not some image will be here for it.
I love seeing John finding his way on the piano with the wonders of a kid.
