You gotta try the Mad Dog (wściekły pies) shot :D it is layered shot: - about 5-10 ml of raspberry or black currant syrup - at the bottom - 40ml of 95,% spirit (originally) but often replaced with 40% vodka ;) - poured carefully to not mix with syroup - a few dashes of tabasco wait until tabasco lays on thje syrup (you can lit it with fire as an option) - than it is ready to shot! at the beginning it burns like hell - or more specific - like a mad dog has bitten your throat (that's the name origin), but afterwards, the sweet syrup cures "that wound" better not drink on empty stomach, especially the spirit version xD

How do you remember them all..? Especially when starting.. How to deal with a request that is unknown? Sure I can look the recipe but that looks unprofessional and most importantly there are infinite variations depending of where I find the recipe, I never find the same amounts and often not even the same ingredients. How to deal with this kind of stuff? Thanks
You don't. There are not that many cocktails you should know recipes for: mostly classics and whatever guests order the most, and then you just get the principles of mixing different types of drinks. Like a sour always starts with 2 parts spirit, 1 part lemon and a little bit less of a part of sugar. And then you can change it. For example, you want to use some liqueur, then you decrease the amount of sugar and, maybe, spirit etc. it's not rocket surgery, actually
