I do not know how much of a Bengali you are but go a little rural side leaving the urban places you will find a lot of dishes which isn't very well known to you. My Mamabari's local people make a lot of bhapa and banta, You should try some those. Also many ingredients are going missing from our daily lives. Will add some videos If I can find some.

I kind of disagree, I think it's more fun that they tried stuff that is a little less talked about. There is so much more to Bengali cuisine than that. Everyone and their grandmother has tried rossogolla at this point let's highlight something else.
Bhapa sandesh is just jaggery, chena nd milkpowder cooked for a long time to create that sticky sweet mixture usually called "kora paak" and then steamed to make it moist and gooey and melty...its an absolute delicacy for bengalis😋😋
Oh calcutta is one of the best and expensive food where you find good bengali food.. Bengali food dishes some give you that rich flavour and some are like have it and get lost in the world of sleep its so comforting relaxing and cooling
They are expensive but really good as well. The one at Nehru Place is soo popular that every time I used to visit the Eros Hotel, the general manager used to complain that their in-house restaurants are underselling because of Oh Calcutta! 😅
No kheer kadam? It's THE BEST! Rosogolla encapsulated in a layer of dried milk. You take a bite and the syrup drips from your lips. EVERY time I visit it's the first thing on my list. Even tho the best place to get it is as far away from DumDum you can get & still be in Kolkata. As for ilisa, every Bengali knows to ask for the belly, because it has the less bones. But even the boniest piece is well worth the effort.

I have tried both, believe me, unless you try you too ain’t gonna believe like me. No lemon can be compared to the Kazi lemon.
Being a Bengali, I didn't have eaten many of the dishes, cause in my opinion they were just modernised version of Bengali dishes, Try to have Ilish bhaapa Bhetki maacher paaturi Chingri maachher maalai-kaari Potoler dorma Til baata Piyanj posto Shukto And there are many more
Kosha mansho goes with pulao. Ilish only goes with hot steaming rice. Luchi with rezala is a joke. Eat it with tawa roti, romali ruti or atleast something like naan . Gondhoraj chicken idk, but macher paturi would be way better choice.
Honestly saying, These are not typical bengali dish except the ILISH Fish. Ilish itself so flavour full so you don't need to put anything to make this wrong. And others dishes are more like a mix and match dish. Cooking style is bengali but Dishes are different. The chef put his own creativity into the typical bengali dishes. Though he didn't compromised with the authenticity.
