  • Slice into thin pieces half of the mangoes and grate the other half mangoes.Add required salt ((the amount of salt varies from mango to mango based on the varieties choosen.) And let it soak for two days.
    Squeeze the juice from the salt soaked mangoes and dry the mango pieces and the grated one for 2-3 days in full sun.
    Add chilly powder,roasted methi and a fistful of mustard powder accordingly to the squeezed mango juice,add the dried mango pieces.
    Take a thick based deep frying pan ,put in on the stove ,add oil,be generous to add it,.once it is hot add red chillies ,methi seeds, black gram dal ,and after turning off the stove just before it is cooled down completely then add Hing .pour this into the above mango mixture.#మాగాయ is ready to eat.
