Ingredients:
350g - Chicken breast
Water for boiling
Salt
1/2 cup - Oil
2 cloves - Garlic
1 pc - Red onion
Shredded chicken
4 tbsp - Soy sauce
3 tbsp - Vinegar
2 tbsp - Sugar
1/2 tsp - Turmeric
1 pc - Red chili
Black pepper
3 cups - Plain rice
2 pcs - Hard boiled egg
Banana leaves

Pastil is one of the Muslim Specialties here in Mindanao. Tinatawag siyang pastil kapag naipatong na siya sa kanin at naibalot sa dahon ng saging. The chicken that Chef cooked was actually called "kagikit".. Matatawag siyang pastil kapag finish product na siya meaning may kanin at naibalot na sa dahon ng saging. Mas malinamnam po yan kung isinamang ihalo ang buto nito na tatadtarin ng pino bago ihalo sa shredded Chicken meat.☺️

Yey pastil! Original pastil is dry, just like what they did. The "kagikit" or the meat must be dry so that it can last for days and avoid early spoiling. Aside from chicken, you can also use fish (preferably a left over grilled carp, there's alot of it in Maguindanao). It's simple mainly because it was priorly made for those traveling. The ancient people of Maguindanao (which live almost everywhere in mindanao prior to invasion) share it to visitors, and the Mujahideen or the muslim fighters had pastil with them during war which caused the spread of the recipe leading to others making their own version (some made theirs spicy, moist, with added toppings and others). Others call it “patil” and if other tribes call it differently, it’s because of their accent which pronounce R more than L.

I tried cooking it and it is sooo yummy po.. i didn't have turmeric however so I replaced it with curry powder and it still worked! Thank you Chef! ❤️

Reading a lot of comments nga that this food saved their school days dahil ito ang kinakain nila because it cheap and filling. Thanks to this recipe. 😋☺️
Nauso itong recipe na ito dahil sobrang sarap at mura sa Quiapo. Pero, napansin ko sa mga stall owners na nagluluto at nagbebenta nito doon ay hindi na nilalagyan ng suka kasi hindi naman daw ito adobo or adobo flakes. Yung katapat niyang condiment na palapa ay puro sakurab o white scallions, sibuyas, sili at niyog ang main ingredients. Walang suka.
Dinadalhan ako nito minsan sa trabaho ko ng muslim kong kaibigan.. malasa sya.. tsaka masarap.
Siya naman ang ipagluto mo nito! ☺️

Maganda sana to consume within the day pero basta naka separate pa ang kanin sa ulam, tatagal ng mga tatlong araw sa ref. 🙂
I suggest po para tumagal medyo dagdagan ang vinegar at I saute ng mas tostado, then palamigin at ilagay sa malinis na garapon.

Bakit may Vinegar? Sa pagkakaalam ko po walang Vinegar ang Kagikit. Toyo lang. Kasi adobo na tawag diyan kapag nilagyan mo ng vinegar.

Tbh chef, I don't understand the hype of pastil. I've tried cooking it a year ago and it just tasted so ordinary. I usually use this kind of flavor in other dishes, so that's why I find the taste of pastil as just ordinary. It will taste better if you mix it in hot rice.
Its hype kahit dito sa village namin. Based sa observation ko due to pandemic and rising prices of foods. Some people are looking ways to eat very affordable meals, tasty and will satisfy their hunger. Kaya ganun sya kahype kasi nga naman compared to carinderia na worth 60-70pesos e half price lang itong pastil.
I think it's because of it's origin. People in Manila get to try a famous Mindanaoan dish that's new to them. Plus, it's cheap kaya mostly, it's market is students and the working class who is always on the go. 🙂
