Hi Vivi, YES!!!! another new soup for me to try never would of thought to put those veggies together but it looked yummy so i will give it a try one day next week. Love how you explain the vitamins and benefits of the ingredients while you are making the food. I know we all cook for the taste but it's nice to know all the health benefits as well. Thanks for the intro to leeks never had them before till you used them in a soup and they are lovely it's a shame that i went 48 years before i tried my first one. My daughter asked if i was going to go back and write your recipes on index cards so they are at hand when i make them. I said nope i will watch them on utube and give Vivi some more viewed time. I was told the more they are watched that it helps the channel not sure if it's true but never hurts to try. Thanks for sharing Vivi. : )

As another vegetarian, it was life altering when I discovered my iron deficinecy was, technically, a vitamin C problem. I usually turn to cauliflower if I feel that once-a-month low energy coming on, but this looks delish. Putting fennels in my borscht (a la a video you did with Sean?) proved a huge hit. This should go down a treat here too.
I'm only at the ingredients part and it sounds so yummy. Nutmeg and cardamom! Slurp!! I love cardamom! The geekery of the vitamins is my passion too. Interesting that vitamin K will help with calcium. COOL!

LOL, an Indian coworker once gave me a bag of cardamom pods. I'd never cooked with them before, so when a recipe for curry powder called for ground cardamom, I ground them up pods and all! Oh well it seemed fine in the recipe, but thanks for the lesson on how to use them:-). And I've never seen a green carrot before ;-)
Cardamom is amazing .... and... if you have eaten garlic and it is still 'lingering' the following morning , sucking a cardamom pod counteracts the smell.... and it really works! ( was told that by an Indian Doctor years ago...) Also nice for adding flavour to custard.... all looks yum...

Cardamon is a wonderful spice, it is such a warm one (like cinnamon or ginger are) and it goes lovely in baking as well. A sugar cookie or butter cookie with cardamon added is fantastic. :-) Very Scandanavian

Just grabbed all my broccoli heads and boiling now for "cream" of broccoli soup, hate the way it makes the house stinky though, lol.Not great for a hot summer day, but am going to freeze it in smaller portions in freezer, as cabbage moth arrived and I don't want to loose it all. lol.
I grow a lot of spinace and broccoli in my garden and often I mix them together in soup. I must try cardamon next time, thats for sure. Kale is also a veg I mix in green soup.

you will not regret getting whole nutmeg - it keeps far longer than the powders and as Debbie said the flavor is out of this world. If you haven't try the nutmeg when you cook potatoes...just a pinch, it doesn't taste of nutmeg it just amps up the potato flavour!
Hi Vivi this reminds me of when I recreated the large lawn in my garden, after pulling loads of brambles and dealing with the rabbit burrows I had a spirit level getting the area flat as I possibly could to regrow the lawn from seed. It must have been very hard for you with your knee problem.
are the cardamom pods moist inside? I love using fresh vs pre ground but usually don't. I love using fresh vanilla beans over vanilla extract when I was baking. mm mm . ohhh the shout out! I'm so making this one this coming week!! You would NOT have sold me on the idea of that soup despite my loving spinach and cooked broccoli but adding the cardamom and nutmeg. mm mmm. I will put it into my carb counter and report back on it's nutrition facts. lol Curious as to how much protein also and if it'll work as a snack as a cup of soup. This diet I'm on is so low in carb and high in protein that it's hard to use veggies in volume at all but I think this in a cup, mm mm.I also needed some ideas for post surgery creamy soups. OH I can also add unflavored protein powder also (not so delicious but I found one that has been said to be non offensive as an unflavored so I'm going to try adding that. but first I'll try it as your recipe completely yours. lol. THANKS for the soup ideas. Your soups are always delicious! It's a good thing you got that freezer!
As Janet said re the seeds. As for protein you could increase the amount by adding beans or chickpeas.......but I'm not sure what that would do to the carbs.......or maybe a low carb protein powder?........ :-)
