      He might have done all the research, and taught you and many others on the job, but he didn’t teach it in THIS vid. The only think he taught was to start the cooking in hot water instead of cold. What about the rest?
      I want to know how you can get them to the right doneness (overcooking makes a green yolk ring- so how long to boil?) And how do you peel, say, a dozen eggs, not just 1-2, without the shells getting difficult to peel without damaging the cosmetics of the egg if you are making something like halved eggs for a Cobb salad or for deviled eggs?
      He left out the important stuff.

    This might be extra, but I’ve found I really enjoy scooping out the yolks and making sort of a dressing with them, Mayo, mustard and some gojuchang, and mixing the hell out of it. I then chop the whites and whatever mix ins and gently mix them with the dressing. Seems like it creates a little bit more of a textual contrast. It’s egg salad tho so it’s always going to be good!

      I cooked at a retirement place in the south US. One woman there would stop you in the hall and tell you how you had gone astray putting onions in egg salad. Very opinionated and micu more simple with the older recipes lol

    Hey Kenji! I used to work at a local sandwich store and boiled dozens of eggs every day to make our egg salad. Your method is definitely the best in my personal experience, so if you're reading this, Kenji is right! Don't start your boiled eggs in cold water people!

      I agree with Jack and have said it before. I love to watch Kenji for his recipes, but I also watch for the relaxation. I appreciate his knowledge and the way he teaches not only the recipes but the utensils he uses and why. I also wanted to point out that I like the painted toenails today Kenji. I am sure I know who did that artwork and it makes me appreciate what a great dad you are!!!

      I personally can’t stand a pickle on a hot burger. I love a cold pickle spear served on the side, but hate them warm on a burger. I feel like the odd man out because everyone loves them on burgers. I just don’t get it 😩

    This is my favorite egg salad recipe. I use Japanese yuzu flavored kewpie and I can’t go back to using regular kewpie. Also, instead of using my hands, I pass the eggs through a cooling rack. I recommend this method if you don’t want to get your hands dirty! Thanks for the recipe! I never get tired of it.

    Kenji, I can't tell you how happy I am about your hard-boiled egg method. Seriously life-changing for me! I've actually won bets with 30 year professional chefs about what is the superior method to boil an egg that peels easily. Your "start in boiling water and then immediately into an ice bath" wins every time. It even works well with the freshest eggs that you can get, not from the grocery store, fresh laid from people who keep chickens, or as we call them in Louisiana, "yard eggs".

    that hardboiling tip is the best. i used to do it the opposite way (starting the eggs in cold water then bringing to a boil) and never understood why my eggs were so bad to peel.

    I'm a big fan of simple curried egg sandwich of just boiled egg(s), mayo, curry powder and salt. Served with lettuce in the sandwich.
    Have started adding diced red onion and wow massive difference! I will definitely be inspired by this video

    Hey Kenji, This looks amazing. It reminds me of the egg sandwich my dad used to make.
    But except for mayo and cleary, He added boiled potatoes.
    So it's basically boiled potatoes, boiled eggs, salt & pepper mashed and all that on a buttered bread.
    Simple recipe, give it a try.

Also I switched to a vegetable cleaver to do this a couple years ago, and now I can use both knives depending on how I feel. You are amazing!!     I use a pot with a steam basket on it starting at a boil, and steam for 10 to 12 mins. They peal great because they are steam boiled.

      I guess it is to avoid double dipping? He probably doesn’t want to lick his fingers, add the salt and olive oil, and then put his freshly licked fingers back in the salad.

    My preferred method (from making egg salad for the cafeteria in college) is to push the eggs through a grid-style (as opposed to grill-grate) cooling/baking rack. Yes, the kind you’d put on a sheet pan. Just use your palm and push the egg down, clean that one off with the next. Perfect diced egg every time

    I found that peeling the egg with the flesh of your thumb rather than the nail/tip of the finger allows to peel it in 2-3 motions. I almost peel the shell into two whole halves.

    It is indeed Tuesday and yup, I certainly had no idea that I would be watching someone make a good egg salad this morning, haha.

    boil your eggs/I use 8 eggs cool down & peel ( I like to put my eggs in freezer 5 minutes) no longer
    now mix real mayo / sweet green relish chopped fresh dill and very finely chopped garlic (2 small cloves) or to taste
    chop green onion (save that for last) mix all other ingredients in bowl take your eggs and
    using a egg slicer / slice once turn 180 degrees slice. 2 at a time now in a separate bowl add a bit of your mayo mix stir gently with fork
    Repeat, this way you have control over how soggy or firm you you like your egg salad (I like mine firm)
    you want to taste the eggs now into the fridge 1/2 hour to bind the Flavors together
    take your (Egg Salad Creation) add a bit of sliced green onion/ salt & pepper to taste)
    Remember 🤔STIR/MIX GENTLY

    You are blowing my mind right now. I used to ALWAYS boil my eggs by putting eggs in cold water, bring it to a boil, cover and take off the burner for 15 min. I have recently noticed that my eggs have been MUCH easier to peel and I HAVE indeed been bringing my water to boil before plopping my eggs in!! I had no idea that was why, I thought I was just getting better at peeling eggs, LOL!!

    Helicopter fridge.... we call one of mine The Imperial Icebox becuase it makes noises like when they're encasing Han Solo in carbonite...
    I'm a big fan of the box grater, it also works on the pickle I use for crunch when I'm too lazy to cut celery. Sometimes I use pickled onions but I find raw onion is nothing I want in my egg salad or it's all I taste. And I add paprika, not mustard. Good thing we're all different, or the world sure would be boring.

    For anyone who has a instant pot, try the 5-5-5 method for “boiled “ eggs. For me, it has a 100% success rate and peels fall off easily. I spent decades being frustrated with boiled eggs looking terrible, particularly for deviled eggs, but getting an instant pot was a game changer. It’s 5 minutes at high pressure, 5 minutes at natural release, followed by quick release, then 5 minutes in an ice bath and it works. Takes about 20 minutes total because it takes a few minutes to come up to pressure, and then your eggs are perfect. You can do a lot at a time, too. Anyway, Kenji’s recipe looks great and much more chef worthy than mine, which is just the boiled eggs, kewpie mayo (for me it has to be Kewpie), and salt and pepper to taste. I always want shokupan bread for the best egg sandwich so I usually don’t make this unless I have shokupan in the house.

    It's me.. I'm the friend with the sweet pickle relish.
    I also put it in tuna salad.. always felt the sweet pickly vinegar taste offset the richness of all the mayo and egg yolk really well.

    There are very few sandwiches that I prefer using un-toasted bread however an egg salad sammy is one of them.

    My go-to way to get boiled eggs peeled easy is "5 minutes" in my electronic pressure cooker (my not-not-instant-pot). However, that gives you fully dry cooked yolks without fail. I think the pressure-steaming somehow gets under the shell and makes a layer that separates the membrane from the egg white.

    Made the egg salad. no complaints at all. I forgot the sweet relish at the store. Egg steaming method works as advertised.

    The easiest way to peel eggs is put them back in the pot with an inch of cold water, put on the lid, and while it's in the sink you slide/shake it like a maniac for 10 seconds. The shells crack and water gets between the shells and the egg, and the eggs can be plucked right out shell free.

    I was far more amused by the sudden hand dive and squishing than I should have been I think. I am going to go make this and add it to my salmon salad I made last night!
