    Dear Friends, Try this delicious Milk Payasam/Sabudana Kheer. its almost prepared in every houses for any special occasions. I provided enough tips & tricks to get a perfect Milk Payasam. Give it a try, you will love it :)
    Ingredients:
    *************
    Milk- 750 ml
    Ghee- 1/2 tsp
    Cashews-10
    Rasins
    Semolina/ Semiya- 1/4 cup
    Sago/ Javvarisi- 1/2 cup
    Sugar- 1/2 cup
    Condensed milk- 1/2 cup
    cardamom- 4
    Salt- 1 pinch
    Rose essence- 1/4 tsp
    Preparation:
    *************
    First boil the Milk for making Paayasam, Take 750 ml full cream milk & boil it well & allow it to cool down.
    In a heated pan, add 1/2 tsp ghee & roast 10 cashew nuts till it turns golden brown.
    Add raisins to this & saute till it bulges slightly. Then move it to another pan/bowl.
    In a heated pan, add 1/4 cup semolina & dry roast till it slightly changes colour & move it to another pan.
    In the same Pan, add 1/2 cup sago & dry roast it well. dry roasting will allow it cook soon.
    After roasting, wash it well in water. Add 500 ml water to the sago & boil it well.
    Once the sago is cooked slightly, add the semolina & mix it well.
    Once the semolina & sago is cooked well add 1/2 cup sugar ,1 pinch salt & mix it well.
    Add 4 crushed cardamom & mix it well.
    Add the cooled down milk using a sieve or filter & mix it well. Change it to low flame before adding milk.
    Add 1/2 cup condensed milk to this & mix it well.if you do not have condensed milk add 1/2 cup sugar more.
    Condense milk will make the Payasam thick & rich in taste.
    Add the roasted raisins & cashews to this & mix it well. Make sure the ghee is completely removed otherwise it will spoil the milk.
    Add 1/4 tsp rose essence to this, its optional only. If you add rose essence you will get nice aroma & rich taste.
    After adding the milk, just boil it for 5 mins under low flame. No need to boil it for long time.
    Delicious Kalayana style Milk Payasam is ready.
