@@maniswolftoman well one thing because either times noodles are associated with a secret recipe or a traditional recipe that had been passed on generationally !and since other cultures don't eat it as a staple it's a thing of surprise and amusement for us .

These cuisines originally don't have noodles as a staple but yes in modern culture everyone has a special place for it. I tried this recipe today. The noodles is really good we love its springy and chewy texture. The minced beef, i add on shallots , garlics, crispy prawn chilli and korean pepper flakes beside the chef seasoning. I did not do the sesame seed and peanuts on it, still works out really well without it.
This kind of noodles was innovated in Sichuan province of China, where is the hometown of Panda. In Chinese pronunciation, we called it as [ Yí Bīn Rán Mìan ] 宜宾燃面, Yí Bīn is the city name! And Rán in Chinese means FIERY!! The single word [ Rán ] could also be used as an adjective to describe anything you feel is pretty cool or pretty fiery!!

I live in a country with fast food only. A gourmet meal is only steakhouse. Watching your videos make me realize how bad I miss authentic Chinese food.
The good ol "Ran Mian". Not many restaurants here in China can pull this off. I've tasted the best and original "ran mian" in Yibin where it originated and boi was it worth the wait because of too many people. Well, I'll continue my food journey here in China. Oh yes. I've been in China for 2 years and I'm currently in Chengdu. Only a few hours away from Yibin.
Thanks for the heart. I'd like to add that during my adventure here in China, I can say that Yibin is the definition of beauty. The place and people are beautiful. Did I mention peaceful? Yes. You can find peace in Yibin just by walking, riding, seeing people do their daily tasks. The downside is, Yibin is a developing city and you can witness its development everywhere, may it be the countless construction sites of apartments, public workers educating people on behaving well according to development and so on. I'm not gonna lie, there's a person by the traffic light telling people instructions when to cross the road by looking which light pops out on the pedestrian light. Did I also forget to mention that they aim to be the cleanest city in China. China has this competition of cleanliness in each city. Guys, China isn't all that bad according to the things you hear from western media. China has its ups and downs and they know the wrong things the previous government has done but they won't let it strangle them forever, they're doing their best to improve with the new system. You might have also noticed most Chinese tourists misbehaving in other countries. Well, yes mainland chinese are all aware of it and they even make jokes about it but they're just misunderstood. The development of China is too fast for its people. The development is too high that the people haven't adapted to it yet. Most of them were poor and grew up from farms and all they know is how to survive. But since they got wealthy right away, some of them who likes to travel get misunderstood for the behaviour. Let's not make fun of other race when we are not sure about their past.

Unfortunately I am not in China now due to the pandemic but while I'm writing this comment I'm currently waiting for my boboji that i am making. Boboji a delicacy originated from Leshan is my favourite. Where are you in China

I've also heard these called "Kindling" noodles, since in the Mandarin name for them, yibin ran mian, the word "ran" means to kindle or ignite a flame. Fuchsia Dunlop has a good vegetarian version of this.

I'm eager to try this variation of 宜宾燃面 (yibin burning noodles). The translation may be a bit confusing. They aren't called burning noodles because they are extremely spicy, although they do have a bit of heat. The reason for the name is that it's not a soup noodle and, aside from the chilli oil and minimal sauce, the dish is served dry. So dry, you could take a lighter and char the noodle.
Western cuisine: First you got to use the butchering knife to cut the meat, then the vegetable knife to cut the vege, and curved knife for shelf fish Asian Cuisine: Cleaver for everything
