This recipe reminds me of a tea masala powder that I buy in an Indian shop, without the cocoa. These spices are so convenient and delicious. Thanks, Chef John!

IMO you could add a couple dashes of cinnamon too. Also if you add half a teaspoon of corn starch to that mix it will help keep it from clumping. I think it helps thicken the hot chocolate a little too. I have been making my own hot chocolate mixes for years. Dark chocolate is good to change up the taste too.
I make hot chocolate with almost exactly the same spices but never knew the technical steps like adding the hot chocolate at a certain point, whisking, etc. Can't wait to try this, Chef John! I am sure it will be brilliant! Now on to the Spanish-Style Hot Chocolate
My hint would be adding a bit of whole milk powder (of course for non-vegans) to the mix (and maybe a dash of soy lecithin) to give the final hot chocolate a richer and creamier texture.

Cinnamon is a much stronger spice than coriander, so a smaller amount means you can still taste the coriander and it doesn't get overpowered by the cinnamon. Coriander brings out the citrus notes of the chocolate, which is then complemented by the cinnamon. Yum! But I like the sound of the one in the video. Think I'll give it a try. "Variety is the spice of life!"

As someone how has had hot cocoa for years! My absolute to go drink is simply 1ts cocoa powder, glass of hot water and some drops of spicy hot sauce. The hot sauce has that fruity habanero taste along with the acidity that bring out the fruitiness of the cocoa. I recommend that you use hot water just to desolve the cocoa, pouring in a small amount to stir it out into a liquid then go in with luke warm water. The effect of the cocoa becomes more mellow and less of that caffeine kick.
Well how about adding a bit of cornflour to the chocolate mix just to give the milk the slightest bit of viscosity to give it a more pleasurable experience?
0:38 Strange how that cacao powder is red. Dutch process normally does the opposite, turning the powder dark and more towards purple and black rather than red. If you do want that red color and don't have the same kind, I would suggest natural cacao, if you don't mind the acidity orprefer it over bitterness (Dutch process makes it alkaline). I personally don't think Dutch process is necessarily "better", I like the natural fruity acidity of cacao. It all gets balanced out by other ingredients anyway.

Only he would use Cayenne in this but it makes everything amazing so i don't doubt it for a second.

FYI milk scalds at 180f. You never really want to go past 165-170f, at least in hot drinks. (At least with my experience in coffee shops)

Would it alter the taste to blend the ingredients to make the dry mix smoother and maybe easier to incorporate into the milk?
I make my own because I'm a type 2 diabetic and always run mine through a food processor. It does seem to help it dissolve better.
