It’s more helpful to other beginner like me, because Chinese cooking wine too many type, Liao Jiu , shao xing jiu, bai jiu , bai mi jiu… and also soy sauce, it’s have light soy sauce and dark soy sauce and mushrooms soy sauce etc … 😢

As a beginner, the easiest way is to start is with a small botttle of the most popular brand of Chinese cooking wine (like Pogoda Shaoxing) and LIGHT soy sauce (like Lee Kum Kee) that is avaliable at the supermarket. Try another brand after that. You will eventually settle on one that your love. These are usually flavour enhancers (i.e. a little is used in each dish) and therefore most people cannot tell the difference between the brands. It only matters to those with a highly refined palate. Hope this helps.
It should. From wong jao, shao xing and hung jao. Just different recipe for usage. I drip a little shao xing in fried cabbage sometimes if it is plan and with a few dry chilly. But i have always question the efficacy of steaming with herbs like red dates, ginseng that needs a longer time to extract it's essence and through the years, I've tried steaming them first before mixing into chicken and add ginger, wolfberries(goji) and wine. Earlier on I also, marinate the herbs with the chicken before steaming. Please feel free to educate me if anyone knows better.
