    Red Date Sticky Rice Cake | 紅棗年糕
    Ingredients | 食譜
    - 120g red dates 紅棗
    - 200ml water 清水
    - 200g raw slab sugar 片糖
    - 50g Okinawa brown sugar 沖繩黑糖
    - 1 heap tsp of organic coconut oil 有機椰子油
    - 320ml water 清水
    - 250g glutinous rice flour 糯米粉
    - 125g starch 澄麵粉
    - sunflower seeds oil for brushing the tray 葵花籽油少許

    Hi friends, Here are a few cooking tips for this recipe. 1) Use the best quality red dates you can find. I bought some big ones, and they smell amazing. 2) Use sharp scissors with a pointed tip to open the red dates. It is very easy. Don't buy pitted red dates. They lose a lot of flavours. 3) I add half of the red date skin to half of the mixture because it is nutritious and looks very pretty. You can skip this step if you want a really smooth cake. 4) The tin foil can stop water from dripping on the cake. Be careful when you uncover the cake. The steam could burn your hands. 5) Let the cake cool down completely or leave it in the fridge overnight before cutting them into cubes. I was a bit rush, so the cake was still sticky, and I couldn't see the layers very well. 6) You can enjoy this cake at room temperature, warm or hot. It is soft and tender. I usually steam them and enjoy them hot. Delicious! 7) You can replace the coconut oil with sunflower seeds oil too. But I like the settle fragrance of coconut oil in the cake.     請問為何不倒下去一起蒸比較快呢?為何要一層一層蒸呢?

      一是因為可確保蒸透,另外是看上去一層層比較美觀。
