Wagyu Beef Short Ribs Smoked On A Yoder Flattop

  • On this cook, I smoked up some Wagyu beef short ribs from Midland Meat Company in Midland Texas. The ribs for this cook were provided by the fine folks at Proud Souls BBQ in Denver Colorado. The total cook time in these Wagyu ribs was 8 hours and the Pit temperatures were between 285 and 300, never lower or higher. This Yoder Flattop maintains temperatures like a champ. These ribs were the absolute best thing that I've ever tasted. The ribs were really rich in flavor and the rubs I used were off the chain good!

    That was some mad skillz with the knife homie!!! Thanks for the clinic. You made that look easy peasy!!! Lol. I never did that to my beef ribs trimming all the top fat off because I thought you needed it. I'm definitely going to give that a shot for sure. Son of a gun! I actually sent you a shout earlier while this video was going not watching all the way through like I should of. Man those are top knotch!! From where you make videos your home I'm assuming, you look like you do pretty well for your family and your self so I dont know if you ever thought about opening up some kind of bbq shack, but if you did there's no doubt you would kill it! I love watching Mr. James and T-ROY along with all the other youtubers but in my opinion you our putting out way better looking grub and are very natural on camera with a nac at teaching and explaining very well. Congrats man your gonna start blowing up real quick!

    OMG it was fun watching your experience the taste of those ribs. I'm spoiled that I can go a mile and a half down the street and pick up Midland Meat Wagyu from Proud Souls anytime I want. All of their beef is ridiculously good. I don't think I've had a ribeye that was anything but Midland since I tried them out. My experience eating that first ribeye was identical to you eating the ribs. You should see if you can get your hands on some of their Picanha! Great video! That Yoder Flattop is proving to be one heck of a stick burning smoker!

    Joe, I keep the soft fat from trimming brisket and beef ribs to make beef stock and to grind for sausage ! I can tell you were never in the Boy Scouts ! Lol ! Beautiful beefers Joe !

    love your videos and just bought the flat top, never used one, I have the yoder 1600 smoker. One question, what do you use to lift the grates when they are hot? It will be amazing to see a video on fire management on the charcoal grill, no one has one. Thanks for your great videos I watch them all the time.

    Random question. I'm looking at victory lane rubs. Which rub do u recommend for chicken? Unfortunately, My son and wife hate anything spicy, so it has to be a sweet rub.

    By the way the ribs look amazing! Here in Europe we can not get any meet with bones attached from Japan due to food regulations. Maybe American wagyu with bones attached instead. I will look in to it.

    Do you recommend temp gauges on each side? I have a YS640s and want to buy this flattop.

      Hello Manuel. I would love to have gauges on my Flattop when I use it as a smoker. Not so much when I'm just grilling. I usually use temperature probes on the grates to watch the temperature.🤘

    Man those ribs look suuuuper tender!!! Great job Joe. You ever wonder why that grill doesn’t seem to give much of a smoke ring?

      Hey Eric, that grill leaves very little if any smoke ring but the food cames out amazing! I think it's because of how I place my charcoal on the far right side and the food on the left side. The exhaust is in between both and I'm thinking that has a lot to do with it. I'll try something next weekend to see if I can get a more pronounced smoke ring. 🤘

      Smokin' Joe's Pit BBQ it’s funny because I have a pitmaker bbq vault and when I cook brisket I barely ever get a smoke ring. The food comes out great but I can’t figure out why.
