I'm pretty obsessed with winter gardening. These 10 winter hardy vegetables are one of the 4 ways I'm able to have a four season harvest. If you want to learn how to grow vegetables in the winter, you need to first look at your climate. If it drops well below freezing, you'll need to provide some sort of cover like a cold frame or greenhouse. After that it's all about picking from a list of winter vegetables, and I share 10 of my favorites in this video.
    Time Stamps:

    8:04 Kale
    9:20 Swiss Chard

I lost everything in North Texas except some young broccoli and some of my kohlrabi plants. Very informative.

Oh no! Sorry to hear that :( In North Texas you should have the same climate as me or warmer, so including some of these next year should help.

I've heard some brassicas and root vegetables can take a lot of cold too. Certain varieties of cabbage, beets, parsnip, carrots, salsify, collards, winter choy, tatsoi, brussel sprouts, scallions, komatsuna, root parsley, rutabaga, oyster leaf, skirret and salad burnet are the ones I've heard about and am hoping to test some this winter (testing other next winter because they'll need more time).

Hey Nicolas! Love that you're all over the cold weather veggies too! I had mixed results with brassicas and root veggies, for example my beets don't last nearly as long as carrots. I've wanted to try growing salsify and parsnips, maybe next year... It really depends on how cold it gets, so some plants will last until November (we call them cool weather veggies), a few less December, a few less January (we call these cold weather veggies). But it's pretty amazing what can still grow while everything else is under a blanket of snow!

Thanks for the inspiration! Do you have to provide artificial light for your winter plants? I'm in grow zone 5, short days in winter, not as cold as some places but average snowfall 200".
