Remember difficulty exists outside simply total xp of monsters. An assault on a heavily defended castle is much different than a fight in a sparse woodland. Monster synergy is also something to consider. Some monsters just work well together.
To stop players from getting worn out between hard encounters, I've always given them other aspects of the game to lean on. I find "set piece" encounters with low-no threat a bit of a waste of time at the table.
