      There's some renewed interest in canning, there's even a couple books there with some funkier recipes if the Ball Blue Book gets too traditional for you!

    Great video Josh . I learn something from your shows all the time . That boil over has happen to everybody that has ever cooked . I'm glad you left it in . Most channels would never show that , being perfect and all .

    Josh you are bringing back memories of when mom before she went to work don't forget to pick blackberries and I mean get plenty, and boy I am glad we did that jelly and jam sure tasted good on cat head biscuit and butter!!!

    I made wine a few years ago because I had enough blackberry jelly to last two years. It was DELICIOUS. Last year I experimented making a natural blackberry wine. No washing of the berries to rely on the natural yeast. Well. It turned out like a port. Can’t wait to offer it to DP guests when we’re allowed to socialise at home again.

    WOOOOOOO!
    Gotta be careful stirring boiling fruit and sugar. That stuff sticks like napalm.
    Take a look at the Zyliss stainless steel potato masher. It's heavy gauge so it doesn't bend, it's got a nice flat bottom, and it's got a silicone squeegee on one side for wiping down the side of a pot.
    Also, for people in other parts of the world, eye means burner, or hob.
    You can also make blackberry syrup for pancakes, waffles, and ice cream.

    When I was just a boy, my mom would make poke salad in a big old cast iron skillet with eggs and some other green, maybe spinach, mixed in. That along with some of the pot-liquor drippings slabbed up on a piece of cornbread was soooooo good. She also used to make fried green tomatoes and fried okra in that same skillet. God, I wish I still had that skillet. Mom was a child of the depression era and she could cook almost anything and make it taste great.

    My grandmother used to make us pick black raspberries & berries as little kids. She would always make jam. It was the best ever.

    for the pokeweed/pokeberry the recipe is called poke salat and if you attempt to use it you want to use the early young shoots as it sprouts maybe several inches tall. Don't want to use the leaves as the plant matures and is flowering/fruiting. Also need to blanch or sautee several times as the whole plant is toxic i believe. I wouldn't suggest without doing some good research on the process

    I have Prime Ark Freedom thornless blackberries. We made our first jelly last weekend. And cobbler was delicious too.

    Back in the 60’s I lived on a property that had various types of wild berries, rhubarb, asparagus, and other goodies. I always said if you went hungry out there, you must have been blind. Mom made lots of treats. We often had berries on our morning cereal. Mom’s strawberry rhubarb pie was delicious - second to none. That property is all developed now and I live with diabetes. Your video brought back some fine memories.

    I've got a bush of blackberries growing in the middle of our blueberry bushes. It makes it easier to pick both. We have several bushes all over our property we get berries from almost every day.

      I agree ! Wine berries are very underrated IMO. Read up on all there nutrition value. Best of all, they're FREE !

      @@Dirtybird37 they are actually a non-native invasive species, but could be cultivated on a farm for their berries. Just as good as the local cultivars.

      @@Farm_fab yes they are from Japan. The Japanese love this berry and believe it helps keep weight off and detoxify your body. One of the few invasives I let grow on my farm.

    My absolute favorite! Of course I don’t have access to wild berries so I have to rely on the supermarket and they don’t know the differences between jam an jelly. I want jam and every time I but jam it’s jelly so the next time I bought jelly and darn it all it was jelly! So disappointed cause I want JAM!!!

    I hate black berries about 98% of Oregon is taken over by blackberries. The bushes just don’t die. Also the black berries in Oregon are invasive.(There are some native ones here but they’re mainly Himalayan I believe.) love your videos by the way.

    Awesome! I love wild blackberries. When I lived in Illinois we had them in our yard and in our neighbors yard and another neighbor was the pastor at the local church and his wife and she would make a deal with us. We go pick a bucket of blackberries and bring them to her in the morning and then we go fishing and come over that night for a fish fry and fresh blackberry pie. It was pretty awesome.
    They are amazing, once they’re established they grow like crazy. We used to cut maybe a third of them down every year so we always had some but they grew back so fast we had to be careful they didn’t take over the entire yard and we had enough to easily fill a 5 gallon bucket without much effort. I love having the wild plants. We had pear and peach trees and when we would goMow and work in the yard we just grab peaches and pears and blackberries. When I was a little kid my uncle in Illinois had a huge farm and he would take us out on the tractor and he had spots where he would grow tomatoes or different fruits and vegetables and he would just carry a salt and pepper shaker with him in a little leather holster and we pull over and just grab Big juicy tomatoes off of a wild vine and pour salt on them and eat them when they were still hot from the sun and it was amazing. If I had a decent size property I would definitely get some blackberries and other varieties and plant them where they could grow naturally. And I’m sure you can attest to the fact that they’re going to taste better than anything you can buy from the store coming fresh off the vine and wild like that. I’ve tried to make cobbler’s and pies out of stuff I bought from the store and it’s not even close.
    You don’t have to take the bugs out, that’s just free protein. Lol
    When you were talking about the difference between jam and jelly by straining it and how you need to let it solidify if you take it just before it solidifies you basically have syrup as well. You could strain it early and make some syrup and then put what ends up in the cheesecloth back let it cook some more and make the jelly and then the rest would be pretty much preserves right?
    Lol I like to cooking videos as well.

    We have wild black raspberries here..... I planted blackberries, but no fruit this year. Last wkend hiked one of our local mtns 4 cups wild low blueberries. Mappppyoude muffins. Thanks for sharing recipe 😊

    You can make a sumac sun tea with the seed head that is lemony in flavour. Also raspberry leaves make a great tea.

    Ha! That piece of toast you wiped up that boiled-over jam looked just like a towel! Did you know you can sterilize your glass-ware etc (nothing metal) in a microwave overn? Just a few seconds kills anything. 'Pro-tip' as you'd say. Thumbs-up as usual.

    I've also noticed the deer browse down my sumac in the late winter and fall when the leaves fall off. It's always browsed on. Even found that to be the case on public land

      I don't have to look for them. They are coming up all over my backyard. They are just beginning to ripen. I have picked a little more than a quart in the last couple of days.

    That jelly is good stuff, we made it from Maroela, this is a wild fruit in South Africa, maybe you have Amaroela cream in your liqueur stores, it came from here

      One trick I learned as a child. Right after picking the berries, go home and wash in Octagon soap. It can be hard to find, but it will kill those chiggers dead.

    I make this all the time, but you made it a little hard for yourself by adding the sugar and then filtering.....I heat the berries and then strain overnight......next day add the sugar to the juice and then heat and bottle......You'll find the filtering so much easier this way.....Best wishes from England....

    I have personally never had poke salad but was always told that you had to boil it and drain the water 3 times, before it was safe to eat... Not sure I would even eat it then.
