This is because in new days people use refrigerator...but in old days curd was consumed shortly after it was made...hence it used to be warm by nature, as lactobacilli bacteria development causes endothermic reactions, that is heat is absorbed.
Curd is kept in fridge in modern times to slow down these reactions and preserve for long time. That's why curd should be taken out of fridge and eaten at room temperature when required.

Jinko lagta hai ki curd khane se sardi hoti hai, unko fridge se turant thanda dahi khane se hota hai, true ayurvedic benefits ke liye room temperature pe curd khana chahiye

Ayurveda says curd is ushna in potency but that doesn't mean it is going to benefit you more in winters because it has other properties too like it has kapha Guna which makes it heavy slimy that's why some people gets chest congestion also. It basically depends on your body prakariti how it's going to react .
    Stay safe🔥.

Many people commenting should know about taseer (hot or cold in nature).
When foods are in digestion, their nutrition splits and starts dissolving in our body (in chemical terms we can say reaction). As we all know there are two types of reactions exothermic (release heat) and endothermic (need heat).
Many foods require heat from the body, so they absorb heat from our body and that type of food are cold in nature mean thanda taseer. That can be avoided in winter and night.
Other hand many food release heat during reaction in our body and that can make us feel warm. That can be avoided in a hot climate. For example garam masala, spicy food, etc.
It is not related to the food temperature which we eat. Taseer is a different thing.
