This is not necessarily so, MANY espresso machines have a preinfusion option that opens the solenoid and allows for line pressure pre infusion either manually or for a predetermined length of time before the pump turns on and achieves full pressure. I've never heard of the pre infusion that interrupts the shot and opens the 3 way valve to the drip tray before continuing...what model does that?
Great to hear from you @mrKafgman35. Pre-infusion that interrupts the shot is available on every USB Rancilio, most of the La Marzocco machines, Simonelli, Slayer EP. There are quite a few. Besides Rancilio Specialty and Slayer LP, I was not aware of any other machines that offer line pressure pre-infusion. I"m curious to know the other machines you are referring to?
@@EspressoServiceNetwork I posted a YT link a few seconds ago, I guess YT doesn't allow that. A lot of E61 types have a lever position that opens the valve before the pump turns on. The video I was linking was from Clive Coffee, and ECM/Profitec has this option as well. Any time I've seen preinfusion discussed it was always in the context of a plumbed-in machine and always was simply opening the valve before the pump. I believe the KVDW machines have a separate lever position for opening the valve and actuating the pump. Cheers

According to the site (and I've never used an LM), what you're referring to they call 'Pre-brew', described as "The introduction of water that wets the top of the puck, using an interrupted on-off-on sequence, prior to the brewing process." and preinfusion is described by LM as "The continuous introduction of water to saturate the espresso puck at a low pressure until an increased static pump pressure is applied, beginning the brewing process." Hope this helps.

Also Seattle Coffee gear has a video called 'what is pre-infusion' that shows a cutaway Rocket machine and goes in depth on this.
