Maha has a unique complex flavor profile, to some people ( or maybe dependent on ripening stage) it can come off having a carrot taste, and this would not be wrong, I was doing research on mango phytochemical composition, and Maha Chanook was shown to have higher than average Inulin sugars, this would explain the artichoke/carrot associations by some people. it is a nice fruit and I prefer it over the honey floral Nam Doc Mai, which is really not complex at all and can get boring after a while. Nam Doc Mai is probably better for making deserts, and mango sticky rice, or eating green.
