派對小食: 《牛油果魔鬼蛋》 Avocado Crispy Prosciutto Devil Egg (ENG Recipe)

  • 呢個「牛油果魔鬼蛋」我一有Party 都會整,因為簡單賣相又靚~
    今次我仲將風乾火腿烘一烘令佢變脆,增加口感同咸香~
    大人都小朋友都鐘意呢!
    今日 (24/4) 隨《星島日報》附送嘅食譜《好煮意-豐營小食》,有齊我示範的5款美味小食。大家都買本支持下~

    份量: (2人份 需時30分鐘)
    材料:
    雞蛋 4隻
    風乾火腿片 2片
    牛油果 1個
    蛋黃醬 3 湯匙
    初榨橄欖油 1湯匙
    檸檬汁 2茶匙
    鹽、黑胡椒 適量
    Ingredients: (2 persons, Cooking Time 30 mins)
    Eggs 4 pieces
    Prosciutto 2 pieces
    Mayonnaise 3 tbsp
    Avocado 1 piece
    Virgin Olive Oil 1 tbsp
    Lemon Juice 1 tsp
    Pinch of Salt and Black Pepper
    做法:
    1. 將風乾火腿片,放入焗爐以180 度焗約 5 分鐘,取出放涼備用。
    Put prosciutto in oven 5 minutes at 180C, let cool and set aside.
    2. 雞蛋放入水中烚約10-12分鐘至全熟。
    Boil eggs in water for 10-12 minutes.
    3. 取出雞蛋浸入凍水,然後剝殼。
    Take out the eggs and set in cold water to cool, peel the egg shell gently.
    4. 雞蛋用刀一分為二,用小匙羹挖出蛋黃放入碗中。
    Cut the eggs in half lengthwise, scoop out the egg yolks.
    5. 牛油果切半,刮出果肉。
    Cut the avocados in half. Scoop out the avocado flesh.
    6. 將蛋黃及牛油果用叉壓碎,加入蛋黃醬、初榨橄欖油、檸檬汁、鹽及黑胡椒,充分拌勻至光滑。
    Mash the yolks and avocado with a fork. Stir in mayonnaise, lemon juice, salt and pepper, mash until smooth.
    7. 把拌好的牛油果蛋黃放到擠花袋,或用小匙羹將牛油果蛋黃醬唧到蛋白殼內。
    Put filling into a piping bag or use a small teaspoon to fill the mixture into egg white.
    8. 將放涼後香脆的風乾火腿片撕細,放上蛋上即可。
    Tear apart crispy prosciutto into pieces and place on top of each egg.
    Tips: 這個菜式宜選用比較熟的牛油果, 果皮比帶啡黑或墨綠色,比較軟身的,才容易做到口感軟滑的牛油果蛋黃醬。
    Use a ripe avocado, which the skin is in dark brown and a bit soft, so you could have the smooth and creamy mixture.
