One of the secrets to crunchy Chinese food is using SWEET POTATO STARCH, instead of the standard CORN STARCH. It also makes an excellent instant rue.

My guess is mustard. Even if my guess is wrong mustard also makes the crispiest chicken hands down. I know it sounds crazy but it's delicious.
Mustard doesn’t create crispness. it’s a binder for attaching your seasoning/flour. The cornstarch brings in his crispy crunch. Yummmm.

Always double dip,always on anything fried unless u like a light crunch.
You use equal parts rice flour and ap flour or potato starch. Then add your vodka. The ultimate crispy chicken 😊
