Just tried it and was an instant hit! So easy to make unlike other videos I'd come across. I accidentally left the cake in the oven for more than 45 muninutes (but under 60 mins) at 170 Celcius and the cake still turned out gorgeous, nice light brown on the top. My partner is not big on sweet but lurrrrrves this one (reduced sugar) so we are having the other half for breakfast tomorrow. will be making this again and again. Thank you👍

Just look up wacky cake or depression cake... This carrot cake is just a variation of depression cake (also known as wacky cake.) Depression/wacky cake is traditionally made with cocoa.. and is very good.. If you do not like chocolate, and prefer vanilla, just add an additional 2 tsp of vanilla to the mix, and then you'll have vanilla depression cake, instead of chocolate or carrot depression cake.
