Easy, Creamy, Chicken Alfredo That's High in Iron, Potassium and Delicious!

    Serves 4
    Ingredients
    2 boneless chicken breasts
    2 tablespoons organic canola oil
    5 tablespoons unsalted butter, divided
    3 tablespoons flour
    1 teaspoon ground pepper, divided
    1 1/2 teaspoons kosher salt, divided
    2 cups half & half
    1 cup freshly grated Parmesan cheese
    8 ounces fettuccine pasta
    5 ounces baby spinach
    Instructions
    Step 1
    Pat chicken thighs dry and season both sides with 1/2 teaspoon each of salt and pepper. Bring a large pot of water to a boil for the pasta.
    Step 2
    In a pan large enough to hold the pasta, place the oil over medium heat. Once hot, add the chicken and cook for 5 minutes. Add 1/2 tablespoon butter and swirl around the pan and continue to cook the chicken an additional 3 minutes. Once the chicken is golden brown, flip and add another 1/2 tablespoon of butter. Cook for 5-8 minutes until the chicken is golden and fully cooked. Remove the chicken to a cutting board and cover with foil to keep warm. Discard the oil and clean the pan.
    Step 3
    Add the pasta to the boiling water and cook until al dente, according to package directions.
    Step 4
    Meanwhile, heat the half and half in the microwave for 1 minute. Place the pan over medium heat and add the remaining 4 tablespoons of butter. Once the butter is melted add the flour, 1 teaspoon salt and 1/2 teaspoon pepper and whisk to combine. Continue to whisk until bubbling for 2-3 minutes. Slowly pour in the half and half while whisking. Constantly whisk the mixture until the sauce starts to thicken and comes to a simmer. Remove the sauce from the heat.
    Step 5
    When the pasta is ready, place the sauce over medium heat and use tongs to transfer the pasta to the pan. Add the Parmesan and baby spinach and toss quickly to combine with the sauce.
    Step 6
    Divide the pasta into 4 bowls. Slice the chicken and place on top of the pasta in each bowl. Serve immediately.
