This is literally how to make something that tastes pretty good to newcomers, while also making them never want to eat at your house again. What's the saddest part is even he knows this, but he'd argue to his dying breath to prevent admitting it.. because it would hurt his sales. He'd rather give recipes thar look impressive, perform mediocre, and cause most of you and your guests extreme stomach problems.. There are plenty of ways to make very tasty dishes that don't require everybody to develop hiatal hernias, acid reflux that requires prescription medicines, and blood pressure, heart problems, and cholesterol problems that require even more. These dishes are instafairytales that nobody ends up liking in the long run. Get a good cut, put some salt, and a little bit of of your choice of spices on it (don't drown it) ..skip all the gimmick tallow BS. Sear then slow cook ELEVATED it in foil so you don't rinse off all the flavor by boiling it. If you're a sauce person paint a layer on and cook it, or two layers on and cook/(set) it. If not, put a little bit more of your preferred spices and set those. Always remember sweet liquid (apple juice, teryaki, brown sugar and water, or hell even a little soda) is your friend. If you don't like sweet, buy some dill and mustard seeds

I used to tallow/butter/bacon fat both sides of my ribs. A friend showed me to only do the presentation side and you still get all of the tenderness but your rack holds together much better…
Tips for ribs. Experiment using different binder for your dry rub, a lot of people use mustard for bbq. If you can save the drippings while its cooking on open heat, wrap with brown butchers paper, tinfoil okay i dont like ot though, and pour the juices you saved on top, elimanted the need for tallow, which id avoid if cooking pork ribs. Of course resting while its still wrapped

dont remove the membrane on beef short ribs. it makes the meat fall off the bone. these are back ribs im not sure how the membrane effects the meat on the bone
I love beef ribs but I think thats also the one thing I hate about them is the amount of meat thats actually left after cooking… *Thats why pork ribs are on my number one…*
Those are little treats but that meat really draws back on those big bones and it gets thick. Wish they had more meat. Those are still pretty expensive. I remember when that kind of beef rib was 99cents a pound 15 years + ago. Around 2000 I can also remember when I worked in meat market we would have sale on chuck roast at .99c a pound. Pork spareribs sale would be .79 and .99. Angus fillets were about 15$ pounds. Ribeys like 7 or 8$. When they would discolor or date out we would bbq spice them and I would buy fillets for .99 all day long. No UA-cam so I didn't know how to cook the best steak back then. We would have meat cook off parties with over 30 pounds of steaks and Buffalo steaks too. We wasted so many because coals were too hot we thought. Lol. Crazy sometimes I forget how much everyone has learned since Internet. Not sure if that's a good thing though now....
