Out of all the street vendor pad thai vids I've seen, this one has got to be the cleanest one. I also liked her technique of putting the spatula between the pad thai sauce and the wok as she was adding the sauce to the wok. The spatula caught any drips.
That's why you saw in the video that after she cooked shrimps for a bit and the other lady took the shrimps out in the separate bowl and mixed it with the sauce and at the end she put the shrimps on top of the noodle before serving or before wrapping the package..
Use fresh shrimp that have never been frozen. Use medium sized shrimp like a 25 count. Cook for a shorter duration, as the shrimp will continue cooking after you take them off the heat, so cook to meduim then set aside covered, they will finish beautifully.

Also, can someone tell me if that lady, who keeps on adding and taking thinks in/out of the wok, is her helper because it really bugs me that she keeps doing that. And I know that if was working a stall like I wouldn't want people to just add and take things out like that. Or is this like a self-serve? Can someone tell me I would really like to know.

The oil before she put the eggs in is not too much. Think about the fact that it is for 3 serving portions, the oil has to be enough to cook the eggs plus the noodle that come in after. The spoons of clear liquid after, I believe is just water. The noodle needs lots of water to soften it down and cooked before seasoning.

She is not cooking slow, this is multiple servings. If you read the sign it is 40 or 50 Baht per serving. I know that doesn't sound like a lot to an American. One serving of most street food in the small villages can be a little as 5 Baht and they wont let you over tip them, its crazy!

In Canada Pad Thai takes like 4 minuets to make and costs 10 bucks.
