Rating Food Influencer Giada De Laurentiis' Tuscan Turkey Soup

As part of my new series rating recipes of famous food influencers, I decided to try making Giada De Laurentiis' Tuscan Turkey Soup. I'm a big fan of soups, and this looks like a good one, so join me to see how it turns out!

My adaptions to the recipe:
- I used a combination of cooked black eyed peas and chickpeas in place of the white beans
- I omitted the chili powder and red pepper flakes
- I used green cabbage in place of the fennel bulb
- I used 1 teaspoon of dried thyme in place of 2 teaspoons of fresh thyme
- I used regular diced tomatoes instead of canned cherry tomatoes
- I used kabocha squash instead of butternut squash
- I used green kale in place of the Tuscan kale
Even with all of these swaps the soup came out fabulous!
