      Dude before I became a Professional Contractor Licensed home builder, Electrician, Handyman, HVAC Technician, Plumber, Electrician and Welder I served in the US Army and I was stationed somewhere in Japan while I'm on active duty I used to work in a small fish and seafood market as my part time job, the owner of that seafood restaurant/market is the old WW2 Japanese veteran taught me how to cut and skins tuna fish and I kept up and learned the skills so quickly. He even taught me how to prepare fresh raw sushi and serves them to his customers. Keep this one thing in mind, Japanese people loves fish! 🐟 they love seafood! Forget the beef and chickens they love seafood and they can't live without it. I know it because years and years of living in Japan while I'm serving in the US military taught me that.

    Man , I have filleted some pretty good sized fish over the years ( Salmon , Sturgeon , rock fish , bass ) But never a big Tuna. This guy has skills and is a craftsman at what he does! And I dig that big fillet knife!

    I’m going to make a couple of wild predictions here - this guy might have done this before, and his knife might be a bit on the sharp side!
    Joking aside, it’s always fascinating watching an expert at work making it look so easy, until you try to use similar techniques on a salmon/trout/whatever. It’s at that point you appreciate how much practice goes in to being this good. (ThankYou UA-cam algorithm).

    That fish looks so delicious. My mouth was watering when he was cutting he back strap… I would have experimented with all tuna recipes for a whole year with that fish 😂 I love tuna. Eat strong animals to get strong. Respect to the butcher. Clean cuts. Obviously.

    You need a highly-experienced cutter to tackle such a valuable fish. A prime blue-fin like that one typically sells for around $35,000 USD or so in the Japanese marketplace. Going into a sushi shop in Japan is a different experience....you typically tell the proprietor how much you want to spend, and he will guide you from there. It is not unusual to spend from $200 to $500 for a good sushi dinner.
