Hey hey... You should try using the big bowl and the roller to do this type of cake the next time... It's what they do in Sweden, but for a much larger batch... Just do it!! 😀

That's a very similar recipe to the one that I make, but mine uses 2 cups of sugar. The difference is that I don't use the creaming method. I always heat up the milk and butter together until the butter dissolves and set it aside to cool down (it has to be lukewarm). Then I whip the eggs with sugar until they are doubled in size, white and fluffy and the sugar is completely dissolved. Then I add the flour alternating with the milk/butter mixture (1/3 at a time) and mix only until it is incorporated. It's very important not to overmix the batter at that stage. Using my method ensures that the Pound Cake will come out light, fluffy and moist, and if I want to make a denser one I will use the creaming method.
The sugar crust on the top forms when there's A LOT of sugar in the batter and it didn't have a chance to dissolve completely. Also it's the reason why the cake got stuck in the pan.
I wonder if the crunchy top had to do with the faux milk.. It's good to know that the recipe does work with out the moo juice! that crunch sounded yummy
It's to do with the amount of sugar in the cake. The sugar won't dissolve in the batter and start caramelizing on the top and bottom, that's why the cake got stuck to the pan.

Yeah, I was pretty disappointed how it stuck in the star pan. I might try that pan again and use some Crisco instead.
Did you use cake or all-purpose flour? Sifted? measured by volume or weight? 8 oz. of fat to 3 c. sugar will result in a sweet cake and the crunchy crust! (too sweet for most) Eggs should have been added one at a time. Each incorporated before adding the next. What kind of almond milk was used, sweetened or unsweetened? Pans should have been greased & floured to insure a good release. The batter was enough for a 9x5 x3 loaf pan and you seem to have used an 8x4x3 pan.

It has a scraper but it is used with the roller and the stainless bowl.

I don't like the plastic bowl of ankarsrum. Not convenient when I try to let the dough out from that bowl. I have to stir many times to clean the dough out from the bowl when it ready pour into the cake pan.
They also make the plastic bowl in metal.
More like a mixer demo to me.
