    Pretty sure that micro foam in the end shot was not from that immersion blender.. more like an espresso machine steamer.

      This dude doesnt even fold the jacket sleeves... the foam at the end is a very different one

    Recipe must be off... Followed it perfectly and the foam won't take. I'm thinking it might be less than a full cup of water?

    after making the foam do I put it in the freezer or fridge for a bit or do I let it sit and then serve it and would I be able to find the soy lecithin in my local stores or no also if I were to buy it in a bag how much would I have to use if in tbsp. or tsp and im curious if there is a substitute for the lecithin?

    How long will the end product last for.. While refrigerated? Can I use anything other than soy letichin to make a foam??

      Hi there! The foam itself will dry up and deflate back into a liquid within 15 to 30 minutes, whether in the fridge or at room temperature, but it can be re-blended as many times as you'd like! As for actual shelf life, that depends a lot on the ingredients you use to make your foam, aside from the actual lecithin.
      To our knowledge, soy lecithin is by far the best, most efficient, tastiest way to make these kinds of foams.

      Brittaniarose You could use guar gum. It works as a thickener/coagulant, kind of like gelatin. Soy is crap anyway.
