    Man, one of my favorite meals in Keto is 2 burger patties, 2 slices of American cheese melted over top, some yellow mustard, some hamburger dill pickle chips, and a little zero sugar ketchup. SO GOOD

    Hey congratulations on 100K subscribers! I'm a subscriber and a lurker. I don't often leave comments. I usually watch via my Roku at the UA-cam channel. I have a kitchenette in my apartment. My choices to cook are Instant Pot, air fryer or electric skillet or dash mini. I'm carnivore now since Feb 29th 2024. Doing well on it. I'm in my 70s. I don't like to cook but love to watch other people cook. I appreciate the creativity of other people that get joy out of cooking.     I love my air fryer. I have a dual heating elements one. It wasn't cheap. Cooks awesome! Currently using up my freezer contents and replacing with meat and low glycemic veggies and berries. Going to do ketovore. Still learning what to do.

    I like cooking mine in about 1/4 inch tallow that I save from cooking ground beef. I love the crust it makes and they never dry out :)

    When i use sous-vide i do NOT vacuum the bag. I place bag in hot water and let that push out the air in a zip lock bag. It gets rid of the air but don't crush the meat.

      Normally I would too, but with the new chamber vac I’m using I can adjust the time for the bag size. With a bit more practice I’ll know how much to do without crushing. This was only slightly compressed so it was close as it was. 👍🏼

      @@tomunderwood4283 Unfortunately none of us can avoid it because everything in our world is exposed to it. All the food in the store is covered in it. Even every canned item is packed in it. Our clothing is made out of it, our furniture ,our beds, most of our dishes ,our cars even our air is filled with petroleum byproducts .

      Everyone likes there’s burger different and time and temp changed based on that, the size of the party, the temp of the beef, and more. Unfortunately beef patties are never going to be a one-size-fits-all recipe.

    You two have really exploded on the scene. When I first started following you I would recommend your channel when commenting to other peoples questions about how to stay on carnivore. Because of the need for a little diversity in the diet and sometimes comfort food. Maybe you just need to snack on something good. Now when I run across those questions usually someone else has already suggested your channel. It happens on facebook and messenger groups and UA-cam and rumble and instagram and X. People are very much appreciating your talents.

    I do sous vide monster burgers (500g) ... i use my own meat grinder (prefere coarser grind) and put the ground beef in a serving ring to form it with only light compression. Then freeze it. After freezing i vacuum seal it and cook it to medium rare. Take it out, pat it dry and fry it in beef tallow to build a perfect crust. Also nice as juicy lucy.

    Great video! :) I LOVE a good burger so this one really speaks to me! Have tried numerous of the methods but haven't tried the air fryer yet. Might need to have a look at that for the future. If I'm makin' really big ones, like half pound plus, I sometimes do sous vide just to make sure they're done but not overdone all the way through. Always great to see you two!

      Sounds great! Thank you so much for watching. For the air fryer I recommend max temp for 5-9 minutes depending on how done you want it and also letting the burger come to room temp for about 30 minutes before cooking. Adjust those parameters to your liking. 😊

    I love to smoke burgers on my grill but I like to use dried out mulberry bushes. A friend has tons of them that grow in his back yard he cuts them back every year so I put the branches in my shed and use that to cook burgers with so good.

Also grilled (my husband used hardwood lump charcoal) hamburgers are the hands down best! And the microwave beef patty sounds absolutely vile. The NO, NEVER again at the end was hilarious 🤣!

    Have you ever heard of Pizza burgers? Old fast food hamburger etc joint in Miami FL. Fun Fair My Uncle worked there he made me pizza burgers. Now I keto it (no bun and low carb sauce) I think the smash burgers would be fantastic for pizza burgers. The sauce and cheese would stay on the meat better when cutting. You can top it with other pizza stuff if you like. I liked them the classic way. 🥰

    I am in a small community right now with a local grocery store that cuts their own meat. NO additives! I asked them to make a higher fat content hamburger for me, and they said sure! This is by far the best burger I have ever tasted 😮. They actually save the fat from the steak to put in my mixture. I think it's probably 70/30. Man! What a great thing these people are doing. You must try local !!!🎉

    I just used eggwhite (to lightly wet and help form crust) on dried, thinly sliced, beef liver. pork panko to coat, then refrigerate on drying rack 20 mins. Fry until crisp! Get your grease hot, let it fry crisp, without over-cooking the liver. Wow! Crispiness overload! Bacon flavor comes through without frying bacon separately! Make your eggs, and enjoy, liver & eggs, anytime!❤😋

      Coat Hamburger patty in pork panco, place on preheated microwave browning tray, (might have to preheat the tray for the other side) once cristal is formado all around an Burger still rare..plate with crumbled blue cheese:
      Best Bacon Cheeseburger, ever!❤❤

    I have cold smoked my burgers with cherry wood and than cooked them in my airfryer to medium rare to medium and they come out so so good...better than on a regular grill. But I have done steaks over charcoal but with a foul pan on top of them to trap the smoke and seared first and really got that charcoal taste, maybe that would also work with burgers. Have to try and see how it works

    I had a steamed burger many years ago. It was actually quite good. Probably want to sear it after to get any kind of crust and to make it look better. Truthfully, coming out of the steamer it LOOKED terrible! It was very pale gray, totally unappetizing, but it TASTED great and was literally dripping with juice. I keep thinking about trying myself, just haven't done it yet.

      This was 80/20 ground chuck. I prefer either 80/20 or 73/27 cheap fatty ground beef. Anything leaner I don’t enjoy as much. 😊

    I have a zstar airfryer. Love it. steaks, burgers, lamb, hotdogs etc. (Grill setting). I have also done asparagus and brussel sprouts on the veggie setting (keto) Still like some veggies. It has multiple functions I have not used yet but will.

    I've just realised that I no longer use the microwave on my combi oven, I still use convection cooking though.
    I foolishly bought a waterless sous vide off of Kickstarter, it takes up too much room.
    But it is good for burgers. I don't form patties, I just divide the mince in the packet in to squares and I might cut each square in half by height.
    So a 500g packet of mince makes 4 or 8 burgers.
    I insert a temperature probe into a burger and batch cook all the burgers, for 2 hours when 54C is reached.
    I brown them in a skillet set to 145C with butter, about half a minute each side.
    Really handy just grabbing a cooked burger from the fridge, I always brown them and it turns out that I enjoy the bark coating with a cool tender centre.

    As decent as I've gotten with the frying pan nothing beats the grill... I do have some suggestions. 1) boiled/steamed 2) fried/confit 3) salt block. Another idea might be ratios of other meats mixed in IE XX% Beef + XX% Bison or pork, lamb, and venison.

    The only thing I would add is buy quality ground beef. If you are near a Costco, try their organic ground beef. When we cook it on the pellet grill from Recteq it is like eating a steak when cooked to 135.

    I am cooking for just me. Harder than I used to think it would be when there was others around. I might try grilling a few burger (or smoking). Then freezing and sous vied to reheat. Worth the experiment.

    Congrats on 100K subs! Still trying to perfect the beef patty, I love the flavor that charcoal gives but I do enjoy the “ease” of my pellet grill. I am still looking for the secret to getting the patties well done while not drying them out too much. :-)

    Helli Chris and Ash, very interesting video! Just a suggestion (if you are interested of course): it would be interesting to try to experiment to try to achieve the most flavourful beef patties mixing up different cuts of beef (brisket, chuck, etc) plus added fat to achieve a different percentage beef/fat (80/20-70/30, etc) and consequently change the flavour. I think, in my humble opinion, this experiment would elevate the beef pattiies to another level of flavour😋 keep up the good work and good luck to you and Ash on your tour😊

    Chris, thank you for sharing all these different ways of making burgers! My favorite has always been on a charcoal grill as well or in a cast iron skillet. I have an Instant Vortex Plus air fryer. I’ve never made burgers in it, but I’m sure it wouldn’t do them justice as the cool air fryer you have. I hope you and Ash have a wonderful weekend! ❤❤

    Im not sure, if you used a browning tray, in your Microwave, or not. I don't know if they are even available, these days, but I have used one for over 40 yrs to brown meat! Never even thought about using one for burgers, until now! I shall try (fry) it. 😂

    How many pounds of ground beef did you buy and how many patties did you get? Love that tiny green egg cooker!

      That was about 6.5 lbs I believe. I made 17 patties out of it. So just a bit over 1/3 lb per patty.

    Love to sousvide a steak...but then flash sear it on the grill or cast iron that is screaming hot... burgers might be good that way too!

    I don't even bother making patties anymore. I just split the chub up into 1 lb chunks and form them into rectangles about 1" thick for freezing in 1 qt ziplock bags. One a day. Easy. I fry them in a carbon steel pan with a little bit of tallow.
    I like smashburgers, but if it doesn't have a pile of grilled onions on it, then it isn't really an Oklahoma smash burger. That's too much work for me on the regular.
    I have heard good things about a frozen patty being cooked in an air fryer straight from the freezer. That would be a great video. I often don't have time to defrost the meat.

    I discovered an UNBELIEVABLE way to cook ground beef:
    Put the beef on a smoker still FROZEN at about 180 degrees. Smoke for at least an hour and a half until the meat defrosts completely and takes on smokiness and color but is still RARE feeling when poked. Then take off until the heat can be turned up high to finish them for a minute or two per side. INCREDIBLE. The best ground beef I've ever made.
    I use the 1 lb Wagu ground beef at Costco and put them on whole, as a "block." TRY IT. You may never go back

    I like grilled burgers the best overall, the one thing I miss is American cheese on it. I can't find any that is made without seed oils as one of the ingredients.

    I use sous-vide on 128 deg. then heat my gas grill above 500 then grill 1 min per side .

    Not surprising that the microwaved patty came in last. Microwaved meat is the most “damaged”. Love this comparison video.
    Personally, I love bacon wrapped burgers which get baked. Obviously, this takes more time, but it really is worth it when time isn’t an issue.

    I get 70/30 beef mince ratio, cook in air fryer 10-12 minutes turn once on 205 degrees in Australia . So you are getting 30 grams of fat per 100 grams of mince ❤

    Either I'm extremely lazy or extremely busy :D I tend to take the easy path...I have an outdoor grill (I cook bacon on it - and anything that should go in the oven, in the summer...) But don't use it all that much. I buy the premade patties from Walmart (orange bag - 75/25) and premade Butterball (unseasoned) turkey burger patties as well... Put some ghee in a pan so the turkey burgers don't stick, then add the burgers in, liberal amount of Badia Complete seasoning... when they're done I put them on a plate and crack 2 eggs into the drippings, a bit of salt. Eggs on top the burgers, drippings on top the eggs. Dinner, done and dusted :P
    Actually this is a pretty big favorite of mine, I eat it 2-3x a week.

    I usually pan fry my burger. I like the grease = flavor staying in with the meat. My second most used way is smash burger with onion and cheese on a griddle. I have a favorite burger. I buy 80/20 prime beef when on sale.

      Wood is already really antibacterial so that helps, but we use good soap, hot water, lots of elbow grease, and then a little boiling water poured over to sterilize after the meat. Let it dry thoroughly. 😊👍🏼

    You addressed your points well and fairly. There will always be the "religious nuts" who are very opinionated and like to set the rules (which they probably break anyway).     Microwaves work well in small apartments or dorm rooms. I wouldn't cook it more than 3 minutes though. My favorite way to cook ground beef has always been in my cast iron skillet until just beyond rare. There is one way you didn't try but not many people like is steak tartare. It can be good. One of your easiest recipes.

      I love steak tartare but always take a whole cut and dice with a knife the tradition way for food safety as whole cuts are less likely to harbor bacteria than ground meats.

      @@jujube2407 I still like certain vegetables, in small amounts. I had to quit corn years ago, and spinach more recently. I still like lettuce and tomato, especially with bacon, beef patty and cheese.

      Personally I like them in an air fryer at max temp for about 8-12 minutes but that can all change depending on how you like them done and how thick they are.

    Have you ever tried to cook a burger patty in a pan to get the charring and then splashing a few tbsps of water in the pan and covering the pan ?

    CHRIS- there is one way that the microwave is an absolute winner when it comes to burger patties….especially when you like the taste of charcoal from your grill.
    Prepare your burger patties, ready for the grill .
    Placed them on the grill, only turning once and deliberately undercook them to only very rare on the inside.
    Remove from the grill and let rest to cool.
    Vacuum Bag them individually or in a serving size however you wish and freeze them.
    When you want one, remove, thaw and gently warm the burger patty starting with 45 second intervals on medium power setting.
    Deliberately remove from the microwave BEFORE they have cooked all the way through and let sit for five minutes before serving. (as food removed from microwave keep cooking after removing)
    This cooking in advance method is extremely helpful for busy families or people who don’t like to fire up the grill for small amounts of food .

    Great video. Not surprised on the outcome ( I use a Greenegg version of the one you used.). I will have to say however that I would have loved to see an open campfire patty and ( for the hillbilly in all of us) one cooked on a running engine!
