In these short weeks, I binge watched all your videos, but especially the ice cream weeks, and most especially since you changed to this recipe. I have made several of your recipes, and I've adapted the flavours to make up some ice creams to use seasonal ingredients. So good! But this ice cream week really takes the cake (haha) - very sophisticated! I am going to go get some food grade lavender asap. And now, I gotta learn about Mira-cleer... anyway, thank you! You do great work!
other ice creams use egg yolks (custard base) which is a thickener. so yeah most ice cream bases have some kind of thickener in them. sorry you are wrong.

I've said it before, and I'll say it again, if you need a thickener to make ice cream, your milk to cream ratio is wrong.
