Because different varieties have different length of flush, going by "two hands" doesn't work. For example, a Valencia Pride can flush 3 feet long, a Carrie maybe only one foot long. You can't go by hand length with either one. For best formation, make tipping cuts so that 3-4 leaves remain on a flush (intercalary unit). New buds will be activated where those leaves join the stem. You can skip a flush on lower more horizontal branches but try to limit strong dominant vertical branches to one flush per tipping action. You can tip any branch during the first few years to get the formation you want. Once the tree begins fruiting tip immediately after fruit comes off. If you have time, tip the branch at harvest.

I don't get the two hand length explanation for tipping. It looks like your started midway up the tree for the starting point but on the second tree you started where it branched out. Which is it? Are you referring to the distance between each set of leaves?

Just don't leave the single branch get too long is the point. Usually 2 hand lengths is fine
