@@anujfnitepro what people don't know is that the North East people (where I'm from) don't use the usual spices (cardamom, saffron, star anise, cinnamon, mace, nutmeg etc etc) that the rest of India uses. We use mostly chillis, garlic, ginger, pepper, fermented ingredients, bamboo shoots, sesame seeds and other herbs which are of the region. Most people don't know about this part of India and think that every one here enjoys spices 😅

This is a absolutely delicious recipe. I was cooking for the first time, on by birthday, and due to corona, my mom doesn't allow any outside food. It's quite easy to make too, thankyou for sharing this recipes. I added too much bread crumbs this time, but I would remember not too, as it makes the dish a bit dry. You can go with GO, Amul or Britannia processed cheese cubes and blocks. They contain cheddar cheese only. Sir, I have one suggestion that you can top the Mac n Cheese with mozarella+cheddar+american cheese mixture and some parmesan as well. American cheese is that white cheese slices we can get in the market easily

Great Video Yaman! I grew up with Macaroni and Cheese as regular meal. I really like your rendition. A few years ago I started mixing in Tikka masala gravy with Paneer and dhaniya to my Mac and Cheese before I bake it... sometimes I will use the leftovers for a sandwich filling along with tomato, onion, mint chutney and Chaat masala between two slices of bread with more cheese and make a grilled macaroni and cheese sandwich. I love mac n cheese so much and I cook it 5-6 times in a month It's proper comfort food for me Whenever I'm hungry at night, I quickly make this. It's super easy to make and tastes soooo good. But I have a slightly different recipe. I cook the pasta in boiling salted water and make the roux in the same way and add a lot of pepper and maybe some oregano if I have it at home, it's optional for me. I cook my macaroni in the white sauce for a while then I place one layer on a plate and put a lot of cheese on it then add another layer of mac and then layer it with cheese generously and then for the crust (it's a secret 🤫) I crush the Lay's Crisps that comes in American onion flavour in a green pack and layer the topmost layer with it and then sprinkle some chilli flakes and some more pepper and microwave it just to get the cheese melty and gooey and get inside of the macaroni shells 🤩, for 4-5 mins. But don't overdo, or else mac will get really dry and the crust will get soggy. The hero of my mac and cheese will always be black pepper for me. I love it just a little too much.
Man that came out super. I added some oregano and chopped tomatoes too, tastes awesome, without even baking it in oven. PS: I used processed cheese as it was more delicious.

Actual cheddar cheese is not orange. When the cheese happens to be orange, a colouring additive has been added. Usually this is annatto (plant based, cfr turmeric).
Hi, Cheddar is only orange from a natural dye that is added during processing, the flavor if real Cheddar should be the same. Cheddar is a least 500 year old tradition, the dye was only added in the last 100 years or so. Some use Gajar extract, some use Anatto. 🙏
