    i remember when i used to line cook. it was a bigger restaurant so we had a full team especially during rush. and i remember completing dinner and lunch rushes being one of the most satisfying feelings. there is nothing else like it in life. i really look back at it fondly. keep grinding brother great work. all the best to you

    HELLO THERE , the job you are doing there is a skilled job , people who sit looking at a screen all day have no clue just how hard your job is and i think you enjoy doing it . I enjoy watching you and learn just why you do different things at times , cooking the meat , spuds , eggs , just so you will have everything ready for a order to be done in good time and all done close together . you are a good cook and how you do your job show's it . BE WELL, BE SAFE, ENJOY LIFE .

    I feel like what you do is very under appreciated. I can tell you are really skilled at your job. It’s definitely not for everyone (me). I’ve thought about doing recordings at work, I’m a commercial carpenter, but I would probably get laughed off the job site, lol. Anyway, keep it up bro, you do great.
    Edit: I can also see you put care and attention into the food, making sure it’s made well and correctly with each order while moving quickly. I respect that a lot. Where ever this is, I would absolutely eat here!

    I should send you some Scrapple. It's a South Eastern Pennsylvania breakfast meat staple here! Most of us here prefer it over bacon. Don't get me wrong, bacon is amazing but we love our scrapple and eggs for Breakfast. But it has to be cooked perfectly. Crispy on the outside and mushy on the inside. It puts a lot of people off when they read the ingredients. But I say don't knock it until you try it.

    Wouldn't judge you because I've never been a line cook but I do like to cook at home for the family.
    I've thought I'd like to do this but man!!! I don't think I'd be able to keep up. You really pump out the food.
    One difference I notice are the omelets, I'd call that a scramble as an omelet has the fillings inside the egg.
    Believe it or not, the absolute best omelets I've ever had were in the US Air Force chow halls.
    But can we just look at those burritos at the beginning of this video... They look delicious. 👍

    As someone who has been Serv-Safe certified and has worked in many different food service jobs, your hygiene and food handling is fine. My main concern is you leave cooked food sitting around on cold plates on various counters and not under heat lamps.

    I started at 16 years old, working at IHOP. I went to culinary school, and ended up managing a 24 hour concept operation. I had my own coffee shop for 10 years. I can just tell by watching you work-you are extremely talented. This place should be paying you well, if you don’t already own it.

    Its been about 19 years since i worked in a a kitchen like this, but your management needs to get you some tongs and some scoops to save you some of those glove changes man. Going through too many gloves in a short timespan. That said watching you work is mesmerizing.

    Instead of changing gloves every time you make french toast maybe you should just keep some tongs in the bucket and use that to pick up the bread instead of your hand.

      When you've been doing a job like this by yourself for as long as he has, a "helper" is actually more of a hindrance. In my opinion. I've been a prep and line cook for a number of restaurants and caterers and always just pushed em out of the way. 😅

    Try Food Prep gloves for making french toast and grabbing raw meat. they are not skin tight, and can go over your normal gloves for the 5 seconds you need them. They are very easy on/off.

    Sry to say this some of the breakfast that you make it does sound good at all like eggs shredded hash brown and ham that’s so plain. I know it’s the restaurant and the owner that made or want it like that. To me it doesn’t look good at all just by looking at it. And for you you’re a pro you do it so easy and in a calm pace. I work in a cafe and pizza place I don’t like it when tags start coming and the line is full of tags and waitress if coming back and forth asking how long and where this and that I tend to stress and don’t know where I am. Any recommendations that you can help me with
