    I was smiling at all your new equipment. I kept seeing your beginnings in the garage and all the old used stuff you tried to work with. So much respect to you all in this journey. Now I wish I came down to visit at its start. I bake my 40 loaves or so a month and give them away to friends and some needy folks. The large scale fascinates me. You earn high honors.

    The happiest time I had in my career was working with bakers who’d been schooled in France. Their knowledge and, most importantly, attitude was just wonderful. We’d turn out an insane amount of production in a night.

    Obviously Harriet is the star of the show!We haven't had an update on her for a while. I noticed that she now lives in a large taped vat. I'd love to see a video on how she's fed and how much you guys go through on a daily basis. Love the videos. I find them fascinating. Love from Sydney, Australia

    I always liked working with computer technology, but after trying the art of baking and confectionery, and this is precisely art, I realized what makes my soul sing and my heart rejoice. It's a hard work, but this work is the best.

    Very much love your videos. However some dangerous things to point out. The small mixer on the table can one day fall over and potentially hurt someone very badly. The lady that is cutting the flour bags from the front could perhaps try from the top side and then cut around the whole top and then take the paper off before pouring the flour. Currently there is a risk with paper pieces ending up in the dough. Cheers and greetings from Montreal

    Im noticing alot of flour dust infront of the girl. Is inhaling it safe over time or is wearing mask safer for staff. Just curious not judging. I do ❤️ the videos.

    I'd like to see you buy a farm. and then start working on a machine flower water sourdough starter the other end of the machine pushes out products lol. that way you don't go away💥💥🍔🍻🐿️
