The happiest time I had in my career was working with bakers who’d been schooled in France. Their knowledge and, most importantly, attitude was just wonderful. We’d turn out an insane amount of production in a night.

Very much love your videos. However some dangerous things to point out. The small mixer on the table can one day fall over and potentially hurt someone very badly. The lady that is cutting the flour bags from the front could perhaps try from the top side and then cut around the whole top and then take the paper off before pouring the flour. Currently there is a risk with paper pieces ending up in the dough. Cheers and greetings from Montreal

I'd like to see you buy a farm. and then start working on a machine flower water sourdough starter the other end of the machine pushes out products lol. that way you don't go away💥💥🍔🍻🐿️
