Chicken Haleem Recipe
*Ingredients:*
- *Grains and Pulses:*
- Wheat (gandum): 1 cup
- Red lentil (masoor dal): 1/2 cup
- Split chickpeas (chana dal): 1/2 cup
- Rice: 1/2 cup
- Yellow lentil (moong dal): 1/2 cup
- Barley porridge (jau ka daliya): 1/2 cup
- Split and skinless black lentil (mash dal): 1/2 cup
- *Spices:*
- Turmeric: 1 1/2 tbsp
- Red chili powder: 1 1/2 tbsp
- Salt: 1 1/2 tbsp (or to taste)
- Red chili flakes: 1 tbsp
- Tailed pepper (kabab chinni): 1 tsp
- Cloves: 8-10
- Black peppercorns: 1 tbsp
- Green cardamom: 4
- Mace (javitri): small pieces
- Nutmeg (jaifal): 2 small pieces
- Cinnamon stick: 1
- Black cardamom: 1
- Cumin powder: 1 1/2 tbsp
- *Other Ingredients:*
- Ghee: 1 1/2 cups
- Fried onions: 4 (medium size)
- Chicken breast: 1
- Ginger-garlic paste: 2 tbsp
- Yogurt: 1 cup
*Instructions:*
1. *Soak the Grains and Pulses:*
- In a large bowl, combine wheat, red lentil, split chickpeas, rice, yellow lentil, barley porridge, and split and skinless black lentil.
- Wash thoroughly and soak in water overnight.
2. *Cook the Grains and Pulses:*
- In a pressure cooker, add the soaked grains and pulses along with 1 liter of water and salt.
- Bring to a boil and remove any foam from the surface.
- Cover and pressure cook for 30 minutes.
- After 30 minutes, remove the lid and mash the mixture finely with a churning stick.
3. *Prepare the Spice Mixture:*
- In a pan, add tailed pepper, cloves, black peppercorns, green cardamom, mace, nutmeg, cinnamon stick, and black cardamom.
- Roast until fragrant, then let it cool and finely grind.
4. *Cook the Chicken:*
- In a separate pan, heat 1 1/2 cups of ghee.
- Add ginger-garlic paste and sauté.
- Add chicken breast and cook for 4 minutes.
- Add half of the fried onions (reserve the other half) and stir.
- Add turmeric, red chili powder, salt, and red chili flakes. Cook for 5 minutes.
- Add 1/2 cup of water and cook until the water evaporates.
- Add yogurt and cook until the yogurt water evaporates.
- Mash the chicken with a churning stick.
5. *Combine and Cook Haleem:*
- Add the mashed chicken to the grains mixture.
- Add 2-3 tbsp of the oil used for frying onions.
- Cook for 15 minutes, stirring frequently.
- In a small bowl, mix cumin powder and ground whole spices with 3 tbsp of water to make a smooth paste. Add this to the haleem and stir well.
- Add the remaining fried onions and adjust salt to taste.
- Cook until the desired consistency is achieved.
6. *Garnish and Serve:*
- Garnish with fried onions, green chilies, coriander, ginger, and lemon.
- Serve with boiled rice or khameeri roti and enjoy!
