    Karachi Style Chicken Biryani Recipe
    #### Ingredients:
    *For Chicken Marinade and Gravy:*
    - Chicken: 1 kg
    - Green chillies, crushed: 1 tbsp
    - Ginger & garlic paste: 1 1/2 tbsp
    - Yogurt: 2 cups
    - Potatoes: 4-5
    - Tomatoes: 1/2 kg
    - Dried plums: 10
    - Tamarind: Use to desired sourness
    - Homemade biryani masala
    - Cumin seeds: 1 tbsp
    - Green cardamom: 3
    - Cinnamon stick: 1
    - Star anise: 1
    - Cloves: 10
    - Black peppercorns: 1 tbsp
    *For Garnish:*
    - Lemon slices
    - Fresh coriander
    - Fried onions
    - Mint leaves
    *For Rice:*
    - Rice: 1 kg
    - Bay leaf: 1
    - Black cardamom: 2
    - Salt: 4 tbsp
    - Cloves: 5
    #### Instructions:
    1. *Prepare Chicken Gravy:*
    - In a pot, heat 1 cup of oil.
    - Add tomatoes and cook until they are soft.
    - Add ginger & garlic paste and cook for 2 minutes.
    - Add crushed green chillies.
    - Add whole spices (cumin seeds, green cardamom, cinnamon stick, star anise, cloves, black peppercorns).
    - Add homemade biryani masala, mix well, and cook for 2-3 minutes.
    - Add 2-3 cups of water, dried plums, tamarind, and yogurt.
    - When the water boils, add potatoes and cover. Cook until the potatoes are 50% done.
    - Add chicken and a little more water to ensure the chicken is submerged.
    - Add food color, cover, and cook for 12-15 minutes until the chicken is perfectly cooked and the water is reduced.
    2. *Boil Rice:*
    - In a large pot, pour enough water to boil the rice.
    - Add bay leaf, black cardamom, salt, and cloves.
    - Boil the water, then add rice (soaked for 30 minutes).
    - Boil the rice until it is 90% cooked, then strain.
    3. *Layer and Cook Biryani:*
    - In a big pot, add the biryani gravy at the bottom.
    - Add sliced lemon and fresh coriander on top of the gravy.
    - Put the strained rice on top.
    - Add more lemon slices, fresh coriander, fried onions, mint, and food color on top of the rice.
    - Drizzle oil over the rice.
    - Cover and cook for 12-15 minutes until the rice is fully cooked.
    4. *Serve:*
    - Your Karachi style chicken biryani is ready.
    - Serve with raita and salad. Enjoy!
