Wooo, great video. Pickled onions are in my fridge 100% of the time, but learning to make more traditional cucumber pickles has been on my todo list for a while... knowing it's not as complicated as I thought is amazing.
Thanks! I'm glad you found it helpful and informative. Pickles can definitely seem like an overwhelming process but they don't have to be. And once you understand the foundation of pickling, what you're using and what you want the end result to be, it's beyond easy to come up with your perfect pickle recipe.
I love a quick pickle onion/cucumber/radish for tacos. I also like using rice wine vinegar! I am not a fan of dill pickles at all, so this has been a welcome step forward in my pickle journey to discover these.
My favorites are pickled beets. I use Alton Brown's recipe where he roasts them in the oven with rosemary and olive oil first. I like to alternate between red ones and golden ones. In fact I've been thinking about doing a big batch soon and this video has totally inspired me to get it in gear! Also, once I had some pepperoncini growing in my backyard and I accidentally left them on the plant so long that they turned red. So I pickled those and they were like tiny slightly spicy red bell peppers.
That would be really good. I generally roast my beets for any and all of their purposes, just makes them taste 1000x better. Ive never even seen red ones before but pickled red pepperoncini would be great in a salad for colour and heat.
Haha fair. That was mostly what we had growing up and I just find them mushy, too mustardy and l love mustard, and just way too sweet. I laughed way too hard at that scene every time I watched it lol.

Anyone can pickle! My issue with bread and butter is they're usually mushy, mustardy and way too sweet. But everyone likes what they like 😊
