Pide is an older dish than pizza. Many Italian chefs told me that he was the ancestor of pizza. Portuguese chefs told me that the mother of Mediterranean cuisine is Turkey. Turkish cuisine is very rich, but people think that Turks only eat kebab. The only problem of Turkish food is that it is not globalized.
Merhabalar, I can tell he is an absolute pro, it's not easy to find an USTA like him outside Turkey. Respect and greetings from Arizona! Selamlar usta!
Wow! That looks amazing. Here in the west we put so much emphasis on school/college etc. and yet few of us ever think of learning the skills this Master has aquired. A true joy to watch. Thank you for another wonderful video.
I could eat one of those now. Fantastic to see them being made from start to finish, but what was it rolled out on? Looked like semolina or something like that.
Correct me if I'm wrong. This is pide, right? I thought the Turkish pizza was called lahmacun. Whatever it is, I love both dishes. In East Terrace, Adelaide, there is a place called Manooshi (owned by an Arabic lady) who makes something similar. I'm going to try this at home now!
Yes u r right. Turkish pizza is lahmacun. It's like tarte flambe. And yes this is pide also which is turkish special fastfood. Both are dishes but my chose is lahmacun :D
Rakesh Bhandary this is pide you are right and i can say lahmacun is differnt version of pide. Lahmacun is more thin then pide also ingredients of lahmacun is ground beef and vegies pides can be different
When I was in Izmir in 1978-9, this was one of the first Turkish dishes I had. I remember it coming with an egg on it though. Miss this, and Donar kebab and the sour dough ekmek straight from the bakery.
Lahmacun OMG I cook this all the time.. So I haven't watched the video and I want to see if this person does it like me so I'm sitting comfortably let's begin :-) comments after this
shannon bales heat it up to the highest temperature possible and then put in it. It’s possible with every oven. Electric and gas are just fine. They just lack that smoky flavor a little bit.
Merhabalar :D hello from turkey :) his name is gökhan and actually we say all workers usta (not bustah). Its mean same as the master. You say shef we say usta. Also we say all handworkers usta :D
Thank you really appreciate you getting back to me, actually I just went there and saw Gino and had some gozleme made by your Aunty - genuinely yum!!! Thanks again mate.
mmm No this is not traditional.. I went out with a Turkish girl so I got this first hand.. I cook it in a pizza oven but this is not a pizza it's something else. Lahmacun is street food and like any street food it's all in one so you can handle and shove in your mouth.. I'm taking a job change and wanting to set up a place only doing street food.. I'm a Biochemist and fed up..So India, Turkey, Mexico and the list goes on.. Just a 3-4 dishes each day and affordable.. I want to do this properly so it's not going to be this year but I have the business plan and funds we shall see :-)
Im turkish, this is traditional? Idk what the turkish girl told you but this is a traditional food to eat, the cheese added isn’t traditional but thats about it. Nice plan for a business though, hope it works out.👍🏼.
Next thing, you'll be telling people from Puebla how to make mole Poblano... I am so sick of Euros walking around as if they own the world and belittling other cultures and claiming that yours is the only way that matters. Like claiming columbus "discovered" America. Its like climbing up a post and claiming you "discovered" cable TV.
@@idontknowthiscommentoww4303 Adding cheese on top is traditional. There are even pide variations from different black sea regions only with cheese or cheese and eggs.
That’s guess work bro ... you can’t make consistent pizza without measuring ... bro that’s safe pizza, pizza that won’t blow out ... it looks like rock
A REAL Pide Chef, no measuring whatsoever. Great, thanks for sharing.
🙏🏽
Ι am from Greece! I love turkish kitchen-food! I am going to visit Instanbul soon!

I could eat one of those now. Fantastic to see them being made from start to finish, but what was it rolled out on? Looked like semolina or something like that.
For an additional crisp and crunchy texture the dough is rolled out in Cornflour
Almanyadan selamlar 👋🏽

It's like a boat shaped pizza. Nice. One more thing, were the toppings sauteed before?
Great recipe is never measured
Only guess for masters in culinary

You know he is the master when he didn't measure the ingredients...

How would we bake it if we don't have a wood oven. I have a gas oven that I cook in. Would love to make it. It looks delicious!!
shannon bales heat it up to the highest temperature possible and then put in it.
