The viewer empathizes more easily with something they understand more easily. It's simple, basic, and powerful logic for making characters that people care about. Furina had a sad life but it is not the saddest of all, but the viewer was more affected by seeing Furina's life than that of any other character because she is human and also because of how they wrote the story, which is well constructed. Although the lives of several archons are sad, one is a wind god capable of cutting mountains and provoking revolutions of freedom with his mere divine presence (if he presents himself as Barbatos), another is the goddess of knowledge capable of manifesting herself in the mind of human beings and manipulate them, another is the powerful goddess of thunder capable of causing storms the size of entire nations, cutting entire islands and the fabric of space time and the other is the powerful god of rock. Creator even of the economy of an entire continent. Although their lives are sad, it is also a little more difficult (not impossible of course since many people empathize with them) to empathize with them. They are beings beyond our understanding and the suffering of living so many years is something that we can only understand in theory and not in practice because we are mortal. On the other hand, Furina suffered an unbearable burden, especially from overwork and helplessness, because she got stressed and cried when she saw that people trusted her less, they wanted her to do something, they expected too much from her, they showed her the list of people who died because She did nothing and the only thing she could do was beg for all the suffering to end. That helplessness, so human, so mortal... It's what makes Furina the character that people empathize with the most.
