Yet another great video and recipe! I have never really been one to cook much outside of a small group of "standard" foods in the family, but your videos have really inspired me. My wife (French Creole heritage) loves the food as well! I have made a number of your dishes, this one included. I just made a 1/2 shrimp, 1/2 crawfish version.
Excellent! The only improvement I make is that instead of plain white rice I use basmati rice. It gives your recipe more texture and flavor. Basmati is a larger grain and more fluffy which gives your recipe the ultimate bump or as you’d say, “It’s fire!” 😁

I threw that in there chili sauce, hot sauce and cayenne pepper.. a lil black pepper and some oyster stock that I had seen some guy using on a different site.. and that lo bay stuff.. Thanks for the recipe! Really good! Just made it but with turkey sausage and cooked, pulled chicken. A few notes from a non-cook: -It helps to have all the ingredients prepped to throw in so that you don't worry about your roux burning. -I like my etouffee thicker, so I added about a third more of flour. (I also quadrupled the recipe because I cook in bulk.) -I let the dish keep cooking for about an extra two hours on a low heat to get "happy", stirring about every 10-15 minutes. Really helps the flavor to absorb into the meat.
My daughter and I came up with this in the kitchen years ago...Chicken & Pickles -1/3 of each of the following: Zesty Italian Dressing/Soy Sauce/Jalapeños with juices. As it’s heating place frozen boneless chicken breast. Stirring occasionally as it thickens and turning chicken. When it becomes thicker slice chicken long ways in the pan(black iron skillet the best). When chicken is white and mixed well take off heat. Add over salad or rice w/side of your favorite veggies. Eat favorite pickles as you’re cooking-helps to make it to the table, lol. Enjoy Chicken and Pickles...

Your stove probably has some leveling screws underneath. Its pretty easy to adjust
