Lovely green mochi. I could eat these every day. I wonder whether green tea or pandan leaves would make a better substitute for green colouring.
Both will do. But Personally I prefer pandan, it goes well with peanut filling, more ‘Southeast Asia ‘ taste.

Yes, you can replace wheat starch with corn starch. It gives mochi softer texture

My guess is water drips on the mochi. You can use paper towel to pat dry the surface of the mochi before kneading
