- Bringing the flavors of Japan to our dinner table, my homemade chicken Katsu curry was a culinary triumph that united us in sheer delight. In this recipe, traditionally the chicken is deep-fried, but l opted for a healthier approach by air frying it instead. With every crispy bite and aromatic spoonful, it was more than just a meal-it was a shared experience of love, laughter, and the joy of homemade goodness. You can serve it with boiled rice and choice of vegetables.
Chicken & Crumb -
500 gm Chicken Breasts, Butterflied & Halved
2 - Large Eggs
1 tsp - Onion Powder
1 tsp - Garlic Powder
2 Tbsp - Plain (All Purpose) Flour
Salt & Pepper To Taste Bread Crumbs for coating
Curry Sauce -
2 Tbsp - Vegetable Oil
1 - medium size Onion, Diced
1 - Carrot, Peeled & Sliced
1 - medium size Potato
3 - Garlic Cloves, grated
5g - Ginger, Peeled & grated
1 Tbsp - Curry Powder
1/2 tsp - Red Chilli Powder
1/2 tsp - chili flakes
1 Tbsp - Plain (All Purpose Flour)
1 Tbsp - Soy Sauce
1 tsp - White Vinegar
500ml - Chicken Stock
1 Tbsp - Honey
Seasoning To Taste
Boiled Rice
Salad as per your choice
