Made this to tonight. Guests said it was the best meal they ever had. Took about 2.5 hrs to make and cook. Used a huge propane weed torch from harbor freight to sear. The fish cakes were a little loose but the freeze trick is spot on. Figured out to use just a little oil and get the cast iron pan to about 400F before placing the cakes. This made a crust that held it together. The aroma while I cooked this was amazing. I used a hot plate and cooked outside with my guests. Great nite. Thanks for the roadmap.

Hey guga I’ve found with burger patties I vacuum seal them full whack in the sealer but leave them sort of rounder and thicker than I want (more ball shaped) and then I roll them out with a rolling pin once they are sealed in the bag I weigh out the meat so they all come out perfect and they also stack well in the freezer
Mate that looks amazing. In the UK we would call a collection of dishes like that in one setting a "Surf and Turf" meaning "From the Sea and the Ground that we walk" 👏👏👏👏

Guga, I know this is out of left field but, would you try sous vide beef jerky? They say that just using a dehydrator doesn't get the temperature on the meat up to safety standards. I'm thinking ,sous vide the beef strips in your choice of seasoning at the safe temp until done, then dehydrate. I hope you try this and thank you for convincing me to buy my own sous vide machine. Best wishes to you and your family even the ones that we don't see on camera that get the leftovers from the episode!
