BAKED MALAI CHICKEN RECIPE INGREDIENTS : Boneless chicken cubes ½ kg Chili powder 2 tsp Salt 1 tsp Ginger garlic paste 2 tbsp Turmeric ¼ tsp Large onion 1 Tomatoes peeled, boiled, and grind 2 Oil ½ cup Milk 2 cups Almonds cut lengthwise 2 tbsp Cream 4 tbsp Grated cheese ¼ cup Clarified butter 2 tbsp Ingredients for Green Masala : Green chilies 5 Coriander leaves 2 tbsp Green cardamom 2 Cloves 2 METHOD : Heat oil, add finely chopped onions, when brown add ginger garlic, and fry for 2 mins, add chicken cubes with turmeric, salt, chili powder, ground green masala, and the choppered tomatoes. Once the masala is fried well, add 2 cups milk, and cook till the chicken is soft and tender, and the milk is reduced. Grease a Pyrex dish with ghee, put half the chicken, sprinkle with cheese, and remaining chicken, drizzle the cream and ghee, sprinkle sliced almonds, and bake for 10 mins on 180 D. MUMBAI KI KHAAS BIRYANI RECIPE INGREDIENTS : Mutton 1 kg Rice 750 gm Onions 2 large Tomatoes 4 Yogurt 1 cup Ginger garlic paste 2 tbsp Chili powder 2 tbsp Mint leaves handful Coriander leaves handful Mixed whole spices 1 tbsp Oil 1 ½ cup Turmeric ¼ tsp Salt 1 ½ tbsp Lemon juice ¼ cup Nutmeg ¼ tsp Mace ¼ tsp Green cardamom ½ tsp Saffron ½ tsp METHOD : Heat oil, add whole spices and the onions, fry to light golden, add ginger garlic paste, fry well, add salt, turmeric, and mutton, fry for 10 mins, add chopped tomatoes, chili garlic, and yogurt, with lemon juice, add 1 ½ cup water, and pressure cook till mutton is cooked. METHOD FOR RICE : Heat water in a pan, and add salt, when water boils add rice already soaked for 30 mins, and cook till ¾ done. FOR ARRANGEMENT : Put ¼ cup water and ¼ cup oil in a pan, put the layer of mutton, add rice on top, then add oil of the mutton, top with coriander and mint, leave it on dum for 15 - 20 mins, serve with raita or kachumber.
