I live in the deep South and never got any complaints. Some of my friends in the 80s would ask me to bake them a cake for their Christmas gifts.
Tried this out today. I never use that much butter so I cut it down to 150 gr it still turned out amazing. I added a pinch of nutmeg and ground ginger. It is by far the best cake I have ever made
I love the way you explain how and why the baking soda interacts with the brown sugar to inhibit gluten bonds from forming, therefore resulting in a tender crumb. I always come away from watching your videos feeling like I know more than I did before I watched them. :)
i just made this, and it tastes so good. i messed up while making it, and it still came out amazing. it’s light and fluffy but with a nice honey buttery flavor. i used chopped walnuts instead of almonds. they didn’t really stick to the cake though. might try adding them earlier instead. i used my toaster oven instead of my regular sized oven. it tends to run hotter, so i baked it at 323-ish and for only 30 mins. covered the cake with aluminum foil starting at around the 15 min mark.

There is also a Welsh honey cake, so moist. Yummmmmm! It is also a great keeper, have had one last three weeks and was still moist and delicious. Admittedly it lasted because I made it to go on holiday and then forgot it.
Came across this today and decided to make it because I've been craving honey and it came out so good. I drizzled some liquid sesame paste with the honey on top and added walnuts instead of almonds. My only error was using my hand mixer which didn't have a medium/light setting and I think the aggressive mixing is the reason why my cake came out denser and lower than expected. Will try using my stand mixer next time! Thank you for the recipe!

John, You should do a Bakewell Tart. A thin, moist almondy (has almond extract) cake with a thin glaze of seedless, raspberry jam. Serve with Chantilly Cream.

It's also just more accurate. It's a lot more convenient to just use my scale imo.

Salt adds flavor, interacts with the gluten, and balances sweetness.

Find a good sea salt. It's much milder than traditional table salt. I like Redmond's Real Salt.
