Heres how: Mix all ingredients in a large bowl. Let the oil become hot then fry the mixture little by little 2 - 3 tbp per scoop.
My husband favorite but I fried it in small portion and I make it crispy in both side. Just egg, salt, pepper, onion and garlic and a bit of seasoning.
The long slinder fish you bought is called locally as “balo” or in english “ needle fish”.try it for tinola-it is very masarap-lami kaayo. Thanks for appreciating and loving our beloved “pilipinas”,
Hi, Andre! Just so you know, we usually don’t marinate fresh fish. Fresh fish tastes really good with just a little salt rubbed on it before frying or grilling. ❤🐟
You can tell the sellers were laughing at themselves because they are not used to speaking English 😂. The guy was trying to explain the fish's name was "Bato" and he pointed his finger saying they got those fish in bato meaning stones and then 2 sellers looked at each other and laughed because the guy struggled a bit explaining in English😂. I love these humble Filipino sellers. ❤
The small fish is mix with union garlic egg Ang flour salt and magic sarap mix it together and fry like patties..the dish called tortang bolinaw or dilis
Hi Andrie i know that fish bcoz i grow up with our fishingnet we called it in bisaya "Baleng". Balo -you can cook tinola or sinabaw with ingredients.onions, kamatis, ginger and lemon grass. Lemon grass is good to lower blood pressure. when you boil with lemon grass wait until the color of water is yellow or green when leaves is fresh. you can add green leafy vegetables like malunggay or pechay You can also fried or prito the Balo fish. Dilis/Anchovy fish- you can cook it torta .removed the intestine. in small size of palm not so thick so make it crunchy.
*Small fish - anchovies is good for ceviche or kinilaw. Ingredients : slice onion, tomato, ginger little vinegar, lemon add cucumber for more veges lastly add salt and pepper to taste .😋😋 Another cook for anchovies it's called torta. How to prepare.slice so small garlic and onion mix into the bowl together the egg and amount of flour like 2-3scoops of spoon mix all together into a nice batter and salt and pepper, then final add the anchovies mix again all together. When you fry get a spoon scoop it full and put in the not so hot oil in the Pan wait until cook little golden brown and wallah it's cook.and partner it with ketchup it's soooo yummy. You guys must try again.😋😋😋 *Balo fish - balo in bisaya English needle fish good for grilled, fried and tinola add with more either pechay or mallongay leaves, onion, tomatos, ginger and lemon grass for more aromatic and extra umami flavor. Salt and pepper to taste.😋😋😋 *Another fish is small tuna is good for cook in coconut milk . Slice onion, garlic, ginger add little. Vinegar salt and pepper and last add the creamy coconut milk boiled up to 15-20minutes. You can also put or add egg plant cook together the fish with coconut milk and wallah soooo yummy.😋😋😋
Mama Olga, thank you for all that you do for the family. ❤ Also good fishes: Lapu-lapu - good for frying then make escabeche which you cooked before in Russia; good for sinigang also Bangus - for grilling - no sauce needed; just salt and stuff with tomatoes and onions; for sinigang also Mackerel - good for frying or fish adobo Grill or fry fish using only salt. It brings out the nice flavor of the fish. Make friends with a trusted Filipina to give you some tips on how to select fish and ways to cook it. Salamat!
Wow! I love it when my dad cooks Paksiw using small fishes (though you can use any fish for paksiw). When we have blue marlin, he would marinade it in a mixture of calamansi and soy sauce (you can add pepper) and put it on the grill. You're so lucky to have access to very fresh fish!
1. Try to buy lapu-lapu or grouper in englisglh. It is a bit pricey but it is a premium white flesh fish. Good for everything especially when steamed or made into sweet and sour fish. They are actually supertar dish in posh chinese restaurants. Try to cook it for your family. Lapu-lapu never disappoints. 2 .The long fish is good fried or made into soup tinola. 3. The small fish are anchovies or locally called as dilis. Good to be made as fish fritters or fish okoy. Just mix it with chopped onion and garlic and equal part cornstarch and flour, egg and water to bind into pasty consistency. Shapecinto mini pancakes and fry till crunchy. You can alsp do paksiw wrapped in banana leaves. Just toss in chopped onion, garlic and ginger and simmer it in equal parts water and vinegar.

I like the family I just hope that they take care of the resources in the Philippines like the water don't leave it running like that because it's important to everyone.
You can wrap the small fish with banana leaves approx 3x3 inches depends on how large you want. Then cut few pieces of tomato and onion and place it at the bottom of the pot then place the fish you wrapped in banana leaves on top of the tomato's and onion add 1 1/2 cup of water just enough to cover the fish add salt then let it simmer for10-30 min or until the water is reduced. Enjoy. We call it pinais na ISDA, you can add Dried kamias and it will become pinagat :-) you can do that in almost all types of fish for big fish you don't need to wrap it in banana leaves.
You may want to try the Tortang Dilis recipe below, but there are plenty of YT videos for dilis recipes. Kids would love it since it would be so tasty and crispy as well. You may want to try Paksiw na Dilis as well. Enjoy!😊 I agree with others that fresh fish is better with just salt and some pepper then fry. Then dipped in toyo with vinegar( or calamansi) and onions and chilis. Big fish like lapu lapu is good when steamed with some spice leeks, onion/scallion, ginger. Or escabeche lapu-lapu the one with sweet n sour souce on top. Other fish to try would be deboned daing na bangus marinated in vinegar with lots of onion and pepper, then fry good partner with mongo. While you're here in the Philippines you may want to try many kinds of fish and seafoods. There are lots of recipes in YT. Also, you may want to cook other dishes just like the ones you cook in Russia, like pork adobo, pancit, sinigang etc since you are here and the ingredients are available, it can help you hone more your culinary skills on Pinoy food so when you get back to Russia you can share it with your family and friend. Google is the key and YT has many tutorial videos too.🙂 ua-cam.com/video/HfVH56JQmGw/v-deo.htmlsi=nN1cLh_KRj965nBa
Hi mama Olga the small fish, dilis in tagalog, anchovies in English. Take out the head and intestines first, then mix with seasoning like salt, egg and chopped onion, chopped garlic, pepper. Mix them will. Then heat fring pan add oil then spoon the mixture to fry, one spoonful at a time. As for grilling fish just rub salt that's all no need to put anything. The best thing is to make dipping sauce. When you marinate fish with oyster siy sauce it will become black the fish.
Suggestion in cooking the small fish (bulinao) mix fish, onion, tomatoes, minced garlic, eggs, flour or cornstarch, salt, black powdered pepper in a bowl and fry just like hotcakes. Yummy dip with vinegar wd garlic.
Cleaning the fish must be very hard. Look for fish vendors who clean the fish first.MAMA OLGA is a very hardworking Mom and super caring grandmother. ❤
The small fishes is called Bolinao..u can cook them paksiw..bolinao soup (tomato, onion, ginger and horse raddish called malunggay its a healthy viand already..tortang bolinao and kinilaw n bolinao..or u can cook it wrap in dahon ng saging for paksiw..just a suggestion only❤❤❤❤
the small fish can be wrapped in small portions in banana leaves and cooked in vinegar with ginger garlic and sibuyas. It wil turn out tastier because of the banana leaves. The Pidlayan, or small tuna, is good if cooked in coconut milk and a little bit of yellow ginger (dulaw), especially good if you fry it first before adding the coconut milk
Wow so many fresh fish... Garfish is nice if fried and deep with light and calamansi... And the tuna can be cooked pakiw and put a coconut milk. I hope everyone will enjoy the delicious fresh fish. Happy cooking mama Olga❤🙏
Andrei just a suggestion when you try to cook filipino food try to search in UA-cam how to clean or prepare and cook the food. Specially the dilis or small fish. Hope you can cook it properly next time.
May I suggest that when you buy fish you choose this fish like; tuna, yellow fin, tulingan( avoid this if not fresh) mantis, liplipan, tangigi, lapu2x (size should be 1/2kg each and up) matambaka, lagaw, danggit and katambak. And pls avoid this if possible; balo(like the long one you buy) it has greenish/blueish bones and a lot of it. Tambasakan, catchers fish (you can ask locals about it).
You can also cook the balo tinola and then the other fish you can grill it it's very tasty and then the dilis you can cook it tortang dilis with egg and flour then mix it will and then put some magic sarap ang a little bit of salt
MOM OLGA,, Hugasan mabuti,Balot sa dahon ng saging maliliit n isda lagyan ng asin luya konti suka at gata at sili, bring to boil in 30 to 45 mins, delisioso,,clean the fish in water,, then wrap in banana leaves with ginger small amount of vinegar, cocomilk salt n chili,, boil to 30 to 45 mins,, enjoy your meal, .Lami😊 Happy family❤❤❤
Try. Pompano. Either you can Fry. Grill or Bake..with tomatoes garlic or onion in the inside of the fish.. it's really delicious . Be careful in eating Pidlayan not good for seniors And those with high high blood

Hi Andrei...the long fish is called "balô" in bisaya, Needle fish in English. The other fish is called "tulingan" (Bullet tuna)...both are good for them fish tinola. While the small fishes are called "bulinaw" (Bisaya)/ dilis (Tagalog)/ anchovies (English). Which are good for torta or omelette...just add beaten eggs, finely chopped onions and garlic add a bit of seasoning powder, then fry like a pancake. When grilling the fish,it is better to sprinkle salt only,no need to pour marinade on it.
Balo fish is masarap for tinola.matamis tamis ang lasa The other one is pirit for sugba or grilled the.small one masarap for torta, add eggs, flour. Bombay. Ahos and seasoning then deed fry. sya.
Those small fish is good to make omelette with.put flour, eggs and some seasoning.fry it.hmm yummy!or you can mix it with vegetables in a soup for the dish called lasqa for example
The small fish is dilis toucan also cook like kilawin especially if it's fresh and fried with cornstarch and flour with egg we call it tortang isda. The big can cook like sinigang na fish, tinolang fish. I hope you can also cook adobong isda that's very yummy
